A maple syrup mead is called an acerglyn. I use honey as well as syrup because syrup has a much lower sugar content. As for the pumpkin spice you might want to try using mainly sweet potato because the pumpkin won't give much flavor. I always throw some in just to say I did but it's really sweet potato in real pumpkin pie anyway. Don't tell anyone.
Speaking of Canada, i offered canadian home-made syrup a few months back, it still stands for next year if the batch of mead comes out good. Not too sure about the combination with honey though, they might mess with eachother

maple syrup is not tapped in the fall, it is tapped late february to early/mid march, depending on when the spring thaw starts, also grade B is not the lesser grade, most people actually prefer grade B as it is smoother than grade A.

For the pumpkin spice mead, I would highly recommend using chunks of roasted Sugar Pumpkin rather than pureed raw traditional pumpkin.
