@@morehn Honestly I like stuffing them with crab and throwing them on the grill the most. I have broiled them as well and they turned out great. I am not a good cook at all so I keep stuff simple because I am fearful of ruining the food, honestly. The best I have had I brought home from Florida and cooked over a bonfire just like you would a trout.

Amazing Video again!! Pompano are our favorite fish. We like to cook them on the stove in a hot pan with the skin side down until it's halfway done and them put the whole pan in the oven on broil until they're just done. Even a little under done keeps the fish super moist. Serve it skin side up and enjoy the crispy skin! Delicious. I don't like to score the skin so to prevent it from curling when it first hits the hot oil in the pan, I place a small plate on top of it to keep it pressed against the pan and get a great sear. You only need it there for a minute to allow the skin to adjust to the temperature.
I would love to see a black tip catch clean n cook! Edit: also want to compliment you on how great your editing is! I love the music choice for your cooking section, and the volume doesn’t overpower your voice. Great job and continue the great work!
First time I tried Pompano, was 3 years ago on a vacation to Florida. We loved it. We stayed in a rental place and went to the local fish market and bought some filets. I grilled them and boy were they tasty. Coming back to Florida this summer. Can't wait to try some more. Thanks for sharing.

Glad to see you are doing great. Just a tip if you don't mind. I carry a 1 gal pump sprayer with freshwater on my cart. Really good for washing down gear, feet, fish etc.
Try cooking your pompano in parchment paper. Simply gut them and score the sides a little. Then season them up and bake them in the parchment paper. (Pick and eat'em off the bone) The old timers use to cook them in brown paper bags and got the same results. Classic old Florida style served with ice cold white wine or champagne and you'll be fine. BOL to you and Brook !!!
I saw your cooler cart and was happy. I purchased one of those in 2000 and had them it ship to the Marshall Islands for me. I used a bungie cord and connected it to my bike and rode down to the marina with a cooler full of gear and 130# reels in those rod holders. That trailer is probably still in service on Kwajalein Island.. Nice Catch guys!
Very nice, of course people realize you can oven bake as well--less oil. NOT to say all oil is bad. One thing you might want to mention--don't get the oil too hot, don't let it smoke, IF it smokes, drain it and start over. I always did it that way, the wrong way. And it is dangerous because if the oil gets too hot, not only does it destroy the nutrative value, it can also get the smoke in your lungs, which cause a very specific cancer. I"m not saying your oil was too hot, just saying I have learned it is very, very important. Thanks for the post, great video.
The whole head has a lot of meat on them and they make one heck of a soup or chowder. Just clean them up before cooking. For chowder, I steam them and use milk and half and half or light cream. Use little water to steam and add that broth. This goes great with the meal.

if you net, dehook and release the ones youre not keeping while the fish is still in the water it might continue to live. If you drag the fish across the sand for 10 feet you might as well keep it
Pompano is so under rated. It’s not fishy at all and has a beautiful fat content to it . When you touch a filet it almost feels buttery . So delicious vik 👌

I buy Golden Pampano at the Asian mart. I never fillet them. Just gut and clean. They really are good fried, steamed, baked or boiled. It has very large bones so its easy to remove the bones. It has firm flesh and creamy taste. It's one of my favorite fish to eat next to Swordfish and Mahi-Mahi. It's expensive but it's worth it.

There is a lot of meat in the part he cut out. They don't need any seasoning. Just one slice on the belly to remove the guts, snip off the fins to avoid scorching them and then bake them.

That depends on how long you fish in a day. After 4-6 hrs, tide can change and you wouldn't want the waves to sneak up and pull your gears out. It happened to me and i learned real quick.
