I'm amazed that many Moroccan people don't know that a vegetarian couscous exists. We berbers have many sorts of couscous with a variety of composition. People made it with what they had available in their gardens. The one that is now presented as authentic Moroccan couscous is one sort only that was made in Fès, with caramelised onions and raisins. Exception is made when there are guests, meat must be put in the couscous (or any type of meat like gut parts and preserved meat). I invite those who don't know other sorts of couscous to go and discover them. They will be amazed of how they ignore their country. For example: couscous with milk in Khenifra (middle Atlas) and fish couscous in the coastal city like El Jadida, Safi, Essaouira, and so on.....
In all honesty I wouldn’t even be able to tell you but I can tell you the roast lamb was in Mechoui Alley at a restaurant called Chez Lamine the royal Cous Cous was called Nomad but I suggest that you book a tour through Moroccan Food Adventures link is in the description!
That’s because a lot of visitors are vegan, there’s meat couscous as we know and no meat couscous no meat tajines etc for vegans and people that don’t like to eat meat everyday, restaurant owners know that and they prepare food for all type of people not just your type.
@user-bv6kv2bc8x: I'm Moroccan as well and I would advise you to travel around our great country and explore our diverse cuisine. I'm from Tafraout originally, and I remember different types of vegetarian couscous . Couscous with lentils, pumpkin, and eggplants. Couscous with turnips and greens. Couscous with Fava beans and carrots. and on and on. These types of couscous are served throughout the week. Couscous with meat was mostly served on Fridays.
In fact, all Moroccans do not eat couscous without meat... Sorry, but your guide made a mistake in the explanation... People who eat couscous without meat are diabetics... In general, it remains optional, depending on the customer.
No, you're mistaken. Long time ago, not all Moroccans could afford to eat meat every day. Almost all dishes were vegetarian even couscous. But nowadays, some Moroccans imagine that couscous doesn't exist in a vegetarian version. I'm a berber, and I know what I'm talking about. Meat was for the rich people before the 80s.
Not true, I’m Moroccan and I don’t eat some Moroccan dishes, الأذواق لا تناقش I don’t like tree nuts and raisins (zbib) in my food like lbastilla dyal djaj I do not like because of tree nuts I don’t like Tfaya either, my siblings eat them, I’m the only one at home who doesn’t. I also have known other Moroccans who don’t eat red meat, only fish 🐠
