      You can also use Tsumack spice which is a lemony herb found in the Mediterranean if you don’t have lemons or in addition to. I tried it that way at a Greek restaurant in NY

    We had Greek neighbors where I grew up, they ran a coney island restaurant in Detroit. We had small yards but they grew amazing amounts of red peppers, tomatoes and figs. In the fall, they made wine which was pink and delicious. My bedroom window faced their house and when the husband would come home from the restaurant - always at night - Olga would make him dinner and play the Greek radio station full blast. It kept me awake, but it's how I came to like Greek music. I'll let you know how the potatoes turn out. Yassas.

    I think I will make this with salmon tonight.
    OK, I made it. So here are a few observations;
    1: Be sure the potatoes are fully cooked first.
    2. It takes some time to get the proper browning in the oven. A little higher oven temperature might be helpful.
    3. Don't start the salmon until you see browning on the potatoes - salmon does not take a long time to cook. Nor the asparagus that I added for greens.
    4. Be generous with the olive oil and lemon and the oregano - there will be some left in the pan - keep it for toast tomorrow morning - YUM!!
    All in all - delicious!! I will make this again. Thanks Christine!

    I'm Greek living in Greece and I love when people (either Greek like Christine or not) who cook and present greek recipes focus on the core of the greek cuisine: simplicity and quality. Well done, Christine!
    Those "greek lemon potatoes" (in Greece we usually call them "oven potatoes") are a super traditional recipe, which usually accompanies roast chicken, lamb, goat, beef or pork steaks, biftekia (kind of greek burgers) etc. Extra virgin olive oil, lemon juice and oregano of good quality are the three basic ingredients for this recipe.
    Organic lemon zest is an extra ingredient which gives the dish a wonderful lemon flavor. Personally, when I cook "lemon potatoes", I also add one or two garlic cloves and some orange juice. Other people add a bit of mustard or additional herbs apart from oregano.
    One could experiment with those extra ingredients to see what suits their personal taste. But, when cooking greek recipes, never forget: simplicity and quality!

      This is a Mediterranean dish... I also very common in Portugal, Spain and Italy.
      This lemon, olive oil garlic combo is so good, we call it "salmoriglio". Some variations include salt, oregano, mint, parsley, pepper... It's an accident recipe originated in Sicilia and went popular in Mediterranean cultures many centuries ago, it can be used as a dressing or a marinade.

    great outcome.. delicious... just a couple of minor comments... being Greek, I use more olive oil and lemon... and a tip... Cover the pan with aluminum foil for the first 30 minutes so the "sauce" doesn't evaporate...then remove the foil and heat for another 10-15 minutes to get the crispiness, while you preserve the "sauce" for some fresh bread dipping.... that's the original Greek way... good luck from Athens

    Wonderful video. Simple recipe. Well presented. With all due respect, would it be possible to zoom back a bit and just have perspective that includes both your hands preparing the food as well as your vocals? So often the view is your speaking while completely cutting off the view of the food prep below. Certainly the occasional close up of the potatoes is fine and expected. Just a thought :-)
