  • This is the easiest way to smoke ribs on a charcoal grill. I'm smoking a rack of baby back ribs using my Weber kettle grill along with some hardwood lump charcoal and hickory chunks. I used a couple of rubs that I picked up at my local grocery store for simplicity and let the smoke do the rest!

    Thanks. I consider myself a "rib snob" which means that I know what I like in ribs (No parboiling, no pre or post cooking in the oven, no cooking them so long that the bone can be pulled out without even disturbing the meat), and I have been trying to perfect a method of getting what I like. Recently, I've been experimenting with adding wood/smoke, and in looking for tips on this, I came across your video, and it was quite helpful. Your standards are similar to mine and our ultimate goal is somewhat the same- full of flavor, and tender, but still requiring a gentle tug. Many in my family do not require sauce, but for the sauce batch I do use Sweet Baby Ray's. It is hard to beat; however, I have an uncle whose BBQ sauce was DELICIOUS, but he passed on without leaving the recipe, (and I was always too ashamed to ask for it), so SBR's it is!☺️ Thanks again!!

    Great video! I've always been partial to Bulls Eye BBQ sauce myself, though Sweet Baby Rays is really good too. I love how informative your vids are. I just got a Weber Kettle for my birthday so this weekend will be my first attempt at smoking on it. Thanks for all the great tips!

We are doing both, tenderloins and a rack of baby back ribs today on our kettle, I have done a whole chicken like your video, chicken wings and drumsticks, etc, but today is first time since 2006 trying ribs on charcoal and wood.     I like this simple approach. The ribs looked awesome. I'm doing a 3-2-1, 6 hour cook this weekend, tho, for my parents and friends. I only do ribs 2-3 times a year so it's well worth it. Well done, young man!

    Good informative video. On the “Sweet Baby Ray’s” sauce I ALWAYS use their “Honey Chipotle”!!! Man you talking about good sauce. It is sweet and has a bit of heat. All around, it is great. My one and only “go-to” sauce. I use it on EVERYTHING!!! Some people find it a bit spicy but I love it!!! Just subscribed by the way!!!

    Thank you for posting these videos. I wanted to know how would approach cooking several racks of ribs at the same time? Lowe's has rib rack that can hold up to 4 sets of ribs. The only thing is your ribs would not being laying on the grate but standing upward. Also, what are you thoughts about putting a bowl of water inside the grill during the cook.

    Great looking bones. Another great video. Sweet Baby Rays is a good sauce. My favorite sauce is Hoboken Eddie's homemade sauce. He has multiple great offerings though. I was lucky and bagged a few bottles before the price increase. Keep up the great work.

    I understand that ribs are to be slow cooked between four or five hours, and are you supposed to check them every one hour before doing any kind of wrapping and applying any sauce? Please let me know. Thank you for giving good instructions. God bless you

    Williamson brothers BBQ sauce. I add a little apple cider vinegar to it for the glaze, maybe 70/30 mix. Love that stuff.

    I'm going to try my first smoking in my old 18" Weber kettle with this recipe. The daisy wheel vents on the bottom are kind of jammed up; might be time to upgrade to a 22" with the nice bottom vent/cleaner.
    As for the sauce, I like Open Pit original, but it gives me horrible gas and diarrhea, so Sweet Baby Ray's original is my go-to, just like you.

    Looks good brother. I also prefer 'bite off the bone' to 'fall off the bone' ribs. About 4 hrs. at 250 deg F and no wrap huh? Very nice and easy. Thanks for posting this video. Too many 3 2 1 stuff out there.

    Could you do 2 racks on the Weber Round? Or is it best to keep it to only a single rack? Really looking forward to trying this out! Good stuff man :-)

      I've done two racks many of a time with great results! I actually like to rotate mine since one of them is closer to the heat. You can also use a rib rack and stand them up on their sides but I find I get a better bark when I just do 1 or 2 racks and lay them flat on the grate.

    One thing I do is put the BBQ I wanna use in a little bowl and microwave it for a sec makes it easier to glaze I find.

    I'm new to charcoaling, and in the process of figuring out if I want a Weber kettle grill or the Char-Griller Super Pro 30-in Black Barrel Charcoal Grill. I noticed that you didn't use an aluminum foil pan with water in it for smoking these ribs, any particular reason why it wasn't used? I realize there's more than one way to cook food, and it ultimately comes down to whatever method the person that's doing the cooking prefers, but I really enjoy the information you bring in all your videos.

      On that video I was shooting for simplicity and making it as basic as possible. The water pan serves its purpose but you can cook without it if you have too. If you haven't made your choice yet I definitely recommend the Weber!

I'm actually going to save a few $$$ and reconfigure my Char-Broil propane grill into a charcoal grill. I have sheet metal, so I'm going to make sure to cover up all the holes, and leave just the two big ones on the side for air flow purposes. I look forward to watching many more videos you upload.

      In this video, I made some short cuts in order to make it easier and save time. I think the water pan is worth putting in and helps overall but you can still cook a good rack of ribs without it as demonstrated in this video!

    Love your videos.
    Sweet baby rays is great. I have found that I like to mix it with another sauce (usually something with more spice). So the first time I sauce them I use the spicier sauce, then the final glaze I put some rays.

      I do use a water pan a lot but for this cook I wanted to go as simple as possible.
