I made this dip a few weeks ago. It was heavenly, and didn’t really taste like eggplant- more like smooth rich garlicky goodness. That being said, I do like eggplant.
Roasted eggplants are a reaaaaaally nice way to get more into them, because they get a smokiness to them that's just so satisfying! I usually just do that on the stove burner tho (using a kitchen tong)
Try out classic baba ganoush! I dont like eggplant either but baba ganoush is a middle eastern type dip similar to hummus and it's very good. No strange texture from the eggplant.

My aunt gave me Claire's book for my birthday and the flat breads with the eggplant dip was one of the first recipes I made and especially the eggplant dip is ADDICTIVE! It's sooo good. And the little twist with the feta in the flat bread is amazing. I have to make this again soon!
I've recently made the flatbread recipe from Dessert Person twice in the last 2 weeks. This recipe is just flawless and everyone I have shared the flatbread with praised it to high heaven. It's so delicious with the za'atar oil. I didn't add the feta mostly out of laziness and it's still absolutely delicious. I made the eggplant dip for the first time yesterday and was shocked at how delicious it is. This recipe is now part of my regular rotation for the summer. Thank you Claire! Every recipe I've tried from Dessert Person or What's for Dessert never misses.
Arabic dishes are so close to my heart. I am an Indian but I have been born and raised in Saudi Arabia for the last 20 years, cannot lie but this was so perfect to the traditional way to do the recipe. Usually we bake the bread in a stone oven (pizza oven). really loved this episode
Fresh flatbread is so good, I can't even wait to serve it with something. I just start tearing into it as soon as its out of the oven and then fall into a food coma from the deliciousness. I have never successfully eaten fresh flatbread with a dip.

Sounds yummy. Your aprons - they make me nostalgic. My grandmother's sister, Aunt Mary, wore that type and had them in lots of patterns and colors. She even wore them for general housework to keep her dress clean.

Made this alongside Samin Nosrat’s Persian Kufte and Salad-e Shirazi and it was absolutely delightful :) I found I had to turn the heat down more towards a medium-low temperature to avoid getting too much char on my flatbread but they were still amazing!
Holy crap, that eggplant dip is so good. I’m in the middle of making the recipe - flatbreads are on their second rise - but i just taste tested the dip for salt - HOLY. CRAP. YUM.
I just made these and I think I'm in a flatbread coma, they were a-ma-zing! I forgot to pack my Dessert Person book when I packed my bag to go housesit and I'm so glad you posted this video!
These were delicious! Beginner cook and the first attempt was great. Instead of just feta, I mixed up the filling a bit. I cooked some onions until translucent with cayenne powder, then added heaps of spinach to wilt, then mixed it together in a bowl with feta and some lemon juice. I could have placed the filling more evenly on the dough before rolling up. I had chunks in some places (yum) but nothing in others, a technique fault on my part

honestly, zaatar manaeesh are usually had with just labneh (at least in my household) so you're fine with skipping the eggplant.

Za'atar, labneh and pita is one of my go-to breakfasts. I think I'll try making the flatbread but find a way to freeze then cook them the morning of!
If you freeze them in between oiled sheets of parchment paper, you should be fine! 🙂
