    We used to split single pita bread, and make pita bread pizzas when I was a kid. I had no clue this was dinner on the cheap. I thought they were amazing

      Electric should work but may not be as effective as direct fire. Induction, definitely no. Check out Adam Ragusea's naan video.

    I used to make everyday flatbread and I found out that what's amazing about them is that they always come out different but their freshness, fluffyness from being made and eaten almost immediately is what makes them special along with the semi roasted, burned parts

    Whenever I heard Roti, I heard my Bengali's neighbor who complaining that term refers to all bread exist in Indonesia...

      Well, technically, you're right. Even here in India, the specific term for this type of roti is Tawa Roti. Tawa means pan. And then there are other types of rotis like Khameeri (Yeast) roti, and Tandoori (Clay oven baked) roti. But because mostly when we eat at home, the default is tawa roti, we don't feel the need to add the adjective and we just call it Roti and I guess that's why at least in India most people would think of this before anything else when they think of Roti.

      @@CSRgamer technically, it maybe. I can't say for sure but I have never heard anyone can it Naan roti. Also, I feel like that would sound equally as annoying as calling it 'Naan bread'. I guess the logic here maybe like how while most sandwiches have the word sandwich with them, you don't call a burger a burger sandwich. It's called just a burger even though technically, it is a type of a sandwich. I hope my answer is helpful.

    When my Dad brought me to a Bengali village as a kid, I woke up to a breakfast that I cannot and will never forget. It had toasted sunny side up duck eggs, Potato Bazi (Google that) and 3 types of flat bread along with it :
    Roti (No Oil)
    Chapati /Paratha (Oil in Batter)
    Puri (Oil in Batter and then deep fried)
    It was unforgettably amazing.
    Babish, I dare you to make all three.

      he used the more tradtiotional method, but you can totally increase the heat and get the same results in a electric stove. My dad have one and he does just fine! It might take a few tries (even those who are not all puffed up should be pretty decent to eat) but you can do it! :)

      @@vaishnavisingh9244 yes! I’ve made naan on my electric stove by turning the heat up super high and then holding the bread (in an upside down pan) in the hot air above the coils. Since moving into an apartment we only have electric stoves, no real fire anymore 😭

    Flatbreads are a staple! You can do wraps, pizzas, borek, whatever you want with them, great basics episode!!!! Also it is a great way to preserve grains, especially in the case of Lavash.

    5:32 there’s this Greek/Lebanese restaurant called Ike’s that everyone from my church likes to go to, and they do their pita this way. It ROCKS.

      I might be wrong but I think that's Cypriot pita and in main land Greece in restaurants the call it Cypriot pita for souvlaki or gyros. I don't know if other countries do them the same way.

    So, for the pan pita you should use the highest flame and flip the pita every 10-15 seconds. That is how you avoid the problem discussed in the video.

    When i was a little kid in Somalia, i remember those being cooked on the inside of literal barrels, with fire burning at the bottom of the inside of said barrels. Never ate anything like that again

    My friend down the street makes pita all the time. He refuses to get the store-bought stuff and after eating his, I agree. Pita and other flatbreads just do not handle room-temperature storage as well as loaf bread.

    Try to make "Pane Carasau", a typical Sardinian bread, crispy and flat. You start basically with flatbread, but when it becomes a ball, you cut it all along the "equator" line and press it between fabric sheets. Then, you proceed to dry it eliminating all the water and humidity by using low-temperature oven. It can be stored for months and can be used to make some kind of rolls like a burrito or stuff like that, by adding water some minutes before the preparation.

    I miss a sandwich shop I used to go to when growing up. Almost all of their sandwiches were in pita pockets. Egg salad, tuna salad, chicken salad, roast beef, chicken club, blt, etc all in pitas. The sandwiches were served with a slice of freshly made pickle and freshly made potato chips.

    used to make pizzas like that last one while working at subway. grab a wrap, some sauce and add some topping and those toaster ovens make short work of it.

    Egyptian pita bread also uses wheat flour. It gives a very authentic taste, similar to local bread bakeries you'd find everywhere in Egypt.

    Man... This has brought back memories of me making roti and various sabji for my Mother for a few years when I was still back home. I could make tasty sabji, but my roti almost always just had different shapes. >_< Rarely could I make them perfectly round. She told me "it's been a year that you've been making roti, and you still can't get it round everytime". So I said "Mom, your stomach won't complain about the shape" lol.
    I miss her everyday ♥

    Hope you look into the Nordic flatbread also one time and the birch bark bread too. ( not the actual bark used,but the intermediate layer between the wood and the bark, dry it up and grind it . Then dilute the flour with it.)

    One CAN use a cast iron pan for cooking at high temps: get it ripping hot, meanwhile get your broiler ripping hot as well. Start on the stove, then put under broiler. Voila! Cooked on both sides

    The roti dough can also very easily be turned into tortilla dough with a couple tiny tweaks. Mix a couple of pinches of baking powder into the flour, rub a little shortening (lard, butter, crisco) into the dry stuff, then follow basically the rest of the method the same way

    Impressed with your Roti technique. As a follow up I suggest stuffing your roti dough with potatoes/onions or something else and pan frying it like the last bread for a quick meal all in one dish.
