I like the timer because it makes me appreciate how long a level took to beat, and where the reactions are coming from. Suppose the timer says 2h, but the video is only 15min, and you're getting salty (not that you get salty often) it makes it easier to understand why. But, if you prefer to turn it off, you should :) You could also add a timer when you start editing, instead of having it "live" (then you wouldn't have to remember to start it, either). Might be more effort, though.
I also prefer timer because it lets me know how long between skips, which is nice to notice when it starts to look "easy" because he skipped several failures that had no good reactions.
The timer should remain as a record of how long it takes you for first clear. No rush, don't freak about it, don't put it visible to you, only to the recording.

Once you figured out the workflow for that it shouldn't take long. Adding splits would obviously be more work, but unless you're doing a speedrun, I personally wouldn't think they add too much to a youtube game vid. Keep making the great content - with or without the timer!
