To cook it the most tender I try to increase 1degC per minute until it reaches 45degC. At home this equates to about 40 minutes at 100degC in a fan forced oven (directly on the bars) - It's more tricky in a camp oven. I also forgot to mention that if the steak doesn't have much marbling then it can be good to lightly oil the steak before the sear, this is another way to encourage a good sear.
