  • 한입 와앙 먹으면 행복해지는 생크림 롤케이크, 도지마롤을 만들었어요~
    부드러운 시트에 진한 우유 맛이 나는 생크림이 가득해서 정말 맛있더라구요.
    크림에는 꼭 연유를 넣어야 우유 맛이 나서 맛있는 것 같아요.
    크림이 많은 것 같이 보이지만 함께 먹으면 전혀 부담되지 않고 오히려 크림을 듬뿍 묻혀 먹어야 훨씬 맛있어요~
    생크림을 휘핑할 때 생각보다 단단하게 휘핑해야 해서 생크림을 냉동실에 20분 정도 넣어 두었다 휘핑했어요.
    진한 생크림이 기분을 사르르 녹여 주네요~

    - 틀 사이즈 Mold size : 37.5cm x 25.4cm
    [재료 Ingredients]
    달걀노른자 5개
    설탕 20g
    소금 1g
    바닐라익스트랙 3g
    식물성오일 40g
    따뜻한 우유 40g
    박력분 85g
    달걀흰자 5개
    설탕 90g
    차가운 생크림 300g
    설탕 25g
    연유 30g
    5 Egg yolks
    20g Sugar
    1g Salt
    3g Vanilla extract
    40g Vegetable oil
    40g Warm milk
    85g Cake flour
    5 Egg whites
    90g Sugar
    300g Cold heavy cream
    25g Sugar
    30g Condensed milk
    [만드는 과정]
    1. 달걀노른자에 설탕과 소금, 바닐라 익스트랙을 넣고 섞는다.
    2. 식물성 오일(카놀라유), 따뜻한 우유(약 40도 정도)를 넣고 섞는다.
    3. 밀가루를 체에 쳐서 넣고 섞은 다음 그대로 잠시 둔다.
    4. 달걀흰자에 설탕을 3번에 나누어 넣고 부드러운 머랭을 만든다.
    5. 머랭의 1/3을 노른자 혼합물에 넣고 섞은 다음 남은 머랭의 반을 넣고 섞는다.
    6. 머랭이 담긴 볼에 달걀 혼합물을 모두 넣고 골고루 섞은 다음 오븐 팬에 붓는다.
    7. 평평하게 반죽을 정리하고 170도 오븐에서 25분 정도 굽는다.(예열 190도)
    8. 뒤집어 식힌 뒤 유산지를 제거하고 테두리를 잘라내고 마무리 부분은 대각선으로 자른다.
    9. 냉동실에 20분 정도 넣어 둔 생크림에 설탕과 연유를 넣고 아주 단단하게 휘핑한다.
    10. 생크림을 케이크 시트에 올리고 중간에 크림을 두껍게 한 뒤 양 끝의 시트가 닿도록 말아 준다.
    11. 냉장실에서 2시간 정도 굳힌 뒤 자른다.

    Nice work #CookingTree. It seems like a lot less complications but putting a big glob of sweetened whipped cream in the centre rather than the standard Buche de Noel? Whipping the egg whites on their own really paid off in giving the sheet cake a lift than most others can noever achieve. I might make this over the Christmas holidays but do it in chocolate with a peppermint oil whipped cream in the centre. Thank you for sharing this with us and making English subtitles.

      노른자 1개가 약 17~20g 정도 되는 것 같아요~
      달걀 사이즈에 따라 다르더라구요~
      틀 사이즈는 더보기와 영상 자막에 적어 두었습니다~

      신선한 달걀을 사용하고 바닐라익스트랙을 넣으면 달걀의 비린맛은 어느정도 잡히는 것 같아요~
      시트는 반죽 상태에 따라 굽는 시간과 온도에 따라서 식감 차이가 날 수 있는데 부드럽게 반죽이 되는게 제일 중요하고 잘 된 반죽을 구웠을 때 너무 단단하다면 많이 구워지거나 온도가 높아서 그런 것 같아요~

      에어프라이어는 오븐과 사양이 달라서 롤케이크를 굽기는 조금 힘들 수 있을 것 같아요~
      구울 수는 있지만 오븐에서 구운 것처럼 모양이 나오지 않을 수 있을 것 같아요~
