Surprisingly easier than you think, I can make a very delicious breakfast meal and I'm dumber than a box of rocks and have no cooking training. It just takes a little initiative and anyone can do it. Try it and don't be afraid if your first attempt isn't amazing, like anything it takes some work and some editing and then you'll have something next level.
I TRULY need Matty to know that my boyfriend and I were watching this as we ate nachos I made. I make it very similar. He is now making them by himself and needed reassurance that he wasn’t using too much cheese (as if that were possible) and I told him to “Make Matty Proud” and he was suddenly okay.
The sound effects for the falling objects landing 🤣🤣 also YES the proper layering of chips (not too few, not too many) and proportions of ingredients (no huge piles that end up needing a fork).

Usually I'm against using pre-made flavourings or spice mixes but I have to say, those Old El Paso seasoning packets (both the nacho and taco ones - pretty sure they're the same) are GREAT for that american style non-authentic mexican taste. So tasty, and they have step by step directions to make it the same way every time. No messing about. I love cooking from scratch, but sometimes I just want a big ol' bowl of cheated taco beef to spoon into premade torillas.
Ok, Matty. I've been making my macho nachos pretty much like yours for years--BUT!--dammit, you showed me something new. I've had them get soggy because I was adding my wet ingredients while building my nachos instead of doing the dippy bowl. I also add my refried beans in with my meat as I'm browning it, along with a small can of chopped green chiles and some worcestershire sauce, cumin, garlic powder and chile powder (your package of taco seasoning). I'm going to build mine like you did this next time I make them and do the wet stuff on the side in the bowl. Also I add chopped green onions to top mine off at the end, and you are absolutely correct about the black olives on nachos--they are the chef's kiss.

I actually made this recipe for a Super Bowl party this past weekend. They got crushed by 4 people. The guy hosting the party made an entire beef tenderloin that was fantastic, and people were actually more into the nachos. I just sent everyone this video, and got the tenderloin recipe off of the host. I believe I used one pound of beef and 2 pounds of cheese.
