you can adjust the height of the engine on the engine mount if you use E36 mounts thats what I was told. But doesnt make a huge difference since its just 1-2 cm

I'm also doing the same on my e30 at the moment, to get the desired effect I would suggest using an aftermarket engine management system. I will be installing a dicktator management system in mine. hope this helps.
Just remove the cathelic converter and weld a pipe in between and if you want u can change the mufflers also for a pipe for a true " straight p i p e " but with a sport muffler is better for driveabilty and ear failure

How do I get my pipes like that? Like a single pipe into a collector then weld on two more single pipes?

Baranów nie ma, x-pipe'a też nie ma :-P są ori kolektory, rura zamiast kata i końcowy tłumik w miejscu środkowego i do końca już tylko rura :-)
