Cooking for oneself in order to save money is a great goal, but so is cooking to get away from the processed stuff. I have expanded my comfort zone in a huge way because of the latter goal, and I am loving it, even with very little counter space. 😁

As a cooker and lover of grits I recommend adding the salt to the boiling water before adding the grits. It's hard to get grits salted correctly if you add it after cooking. Glad to see you using them!

Lots of veggies? I only see a green pepper and potato (that's only technically a veggie as it has about as much nutrition as pasta). Onion is more of a seasoning (although probably more nutritious than the potato). Tomato sauce is not a veggie either, not any more than ketchup or sweet relish are.

I think frozen spinach is the best deal going! It takes a lot of fresh spinach cooked down or steamed, to create a bag. Fresh is wonderful for salads etc, but if you’re cooking with it, it’s a deal to get the frozen! Love your videos! So glad i found you!
Another tip: some grocery stores (like Wegman’s) sell frozen mushrooms for cheap! If you don’t think you’ll use an entire carton of mushrooms fast enough because you’re only cooking for 1, frozen is the way to go. Taste just as good as fresh mushrooms. I add them (and frozen bell peppers) to ramen, chow mein, pizza, pasta, etc

here in Belgium we also have prices going up. I have picky eaters, meaby trying some of these recipes. I strech soup by adding more water and spices and replacing half of the ground meat in recipes for lentils. i'm looking forward to see the baby! ❤😊

I REALLY want to try that chicken pot pie if I could just get my finicky, vegetable shy husband on board. 😭 I don't eat enough to make it just for me but it looks so good. Mushrooms are a meaty substitute in texture but they are not high in protein. In that whole package there’s about 6g. That is less than 1 egg’s worth protein, divided among however many servings.

I made the potato soup you showed in another video with the bagged frozen potatoes, added in canned veggies and served that for dinner. Then, I took the left over soup, cooked some turkey sausage and added it into the soup. I then baked Cresent rolls, cut them and added the pieces to the top and finished with cheddar cheese and scallions to make an unorthodox pot pie. So good! Thanks for the inspiration, Julia!
I’m so thankful I found your channel. I’m on a really tight budget and with your videos I feel I can do this! I followed a video for this past week that was meals for the week for $10 and it was great. Oatmeal, breakfast tacos, pinto beans, fried rice, etc.
We love Lentils and have made a soup similar to this and it is so good. And for the vegetable pasta I have done that also and added zucchini and summer squash to it and definitely can’t do without the mushrooms perfect. Enjoyed this video very much.

The key to budget friendly meals is simple ingredients. Shop the sales and get creative!! I fed a family for years on a very little budget. I have never had grits so maybe something I will be trying. I love this kind of cooking! Easy, flavorful and you can do multiple recipes with those types of ingredients. I found a couple you did that are new to me and I'd like to try!
These are well thought out and interesting recipes for those of us trying to hold to a budget line. I especially like the use of lentils which are often overlooked.
I have 2 easy lunch options for that leftover pasta from the sausage pasta dish. I use leftover spaghetti or butter noodles or any pasta I make too much of. All you need is a tab of butter, a small drizzle of olive oil, splash of lemon juice (bottled), pepper, and some parmesan cheese- bonus if you have dried parsley. I already have these in the pantry or fridge. The other option is just adding Italian dressing and any extra veggies and cheese I have on hand for an easy cold pasta salad. From what you bought a little onion, and bell pepper is perfect.
That looks delicious! I love one-pot breakfasts. I do eggs, grits, and usually salmon or tuna just about every morning. Lots of proteins knock out the mid-day cravings and keep you full longer. And it's cheap.😉

Let me just say, the chicken pot pie was sooo good!! I doubled the recipe for my family, my sisters family and my parents for Sunday dinner today and everyone loved it and went back for seconds! Shelves are empty in a big part due to covid backing up shipments of things to the stores tbh. My store got a shipment in of Christmas stuff last month (March) off the truck that went straight to clearance lol

I found and subscribed to your channel a year ago because of one of your extreme grocery budget videos when my husband had lost his job and we had a little baby. So glad I did! A few changes I would make is forgo the can chicken, crushed tomatoes, tomato paste and cream of chicken and buy a roast chicken to shred and an additional can on the hunts sauce. That way you can make your own chicken broth and cream of chicken soup for the pot pie and you get the added spices from the hunts sauce for your pasta dish. And if you have any left over chicken and pasta, some soup with the broth. Wonderful ideas and a great use of your budget. I'm definitely going to try that Grits and eggs casserole.

here in Belgium we also have prices going up. I have picky eaters, meaby trying some of these recipes. I strech soup by adding more water and spices and replacing half of the ground meat in recipes for lentils. i'm looking forward to see the baby! ❤😊

That is less than 1 egg’s worth protein, divided among however many servings.

I made the potato soup you showed in another video with the bagged frozen potatoes, added in canned veggies and served that for dinner. Then, I took the left over soup, cooked some turkey sausage and added it into the soup. I then baked Cresent rolls, cut them and added the pieces to the top and finished with cheddar cheese and scallions to make an unorthodox pot pie. So good! Thanks for the inspiration, Julia!

We love Lentils and have made a soup similar to this and it is so good. And for the vegetable pasta I have done that also and added zucchini and summer squash to it and definitely can’t do without the mushrooms perfect. Enjoyed this video very much.

I have 2 easy lunch options for that leftover pasta from the sausage pasta dish. I use leftover spaghetti or butter noodles or any pasta I make too much of. All you need is a tab of butter, a small drizzle of olive oil, splash of lemon juice (bottled), pepper, and some parmesan cheese- bonus if you have dried parsley. I already have these in the pantry or fridge. The other option is just adding Italian dressing and any extra veggies and cheese I have on hand for an easy cold pasta salad. From what you bought a little onion, and bell pepper is perfect.

A few changes I would make is forgo the can chicken, crushed tomatoes, tomato paste and cream of chicken and buy a roast chicken to shred and an additional can on the hunts sauce. That way you can make your own chicken broth and cream of chicken soup for the pot pie and you get the added spices from the hunts sauce for your pasta dish. And if you have any left over chicken and pasta, some soup with the broth. Wonderful ideas and a great use of your budget. I'm definitely going to try that Grits and eggs casserole.
