- We love this lovely traditional Scottish shortbread recipe for Pitcaithly Bannock its so delicious and really easy to make. Pitcaithly Bannock is similiar to a plain Scottish shortbread but the difference being the Picaithly Bannock contains candied peel and ground almonds. It originates from Pitcaithly in Perthshire and is lovely served with tea or coffee.

This delicious Scottish Pitcaithly Bannock recipe is light and has a bite with a slight crunch to it. The golden shortbread contains candied peel, ground almonds and a little milk and is very very easy to make. This Scottish shortbread is lovely as part of an afternoon tea tower and is a nice treat to serve to visiting family and friends.

This looks like a very tasty recipe to include in a Christmas cookie tray! I've saved it to Pinterest, and I even have a pretty thistle wedge shortbread mold, so it'll look authentic 😁

Angie we here in America make small delicious shortbread cookies. And I always loved Walkers Shortbread individual cookies. My mother used to make 5 different kinds of Christmas cookies. Mmmm. I used to make Krinkled Cocoa Cookies, homemade scones, Russian Wedding Cookies for my family. Those Wedding Cookies are buttery balls with Confectionery sugar on them. Lol. Is Confectionery Sugar like Caster Sugar?
Hello, If it is more like a powder then that is probably what I would call Icing Sugar. If it is grainy then yes I think it would be caster sugar. I like using golden caster sugar as it has a lovely flavour to it and I think a little less refined too. xx
My mom called them Russian Tea Cakes, and then I've seen them called Mexican Wedding Cookies, and they remind me of a basic shortbread with nuts added. One of my favorites for Christmas too!
