I checked the undhiu is not like actually like gujarati ...they serve whatever undhiu which is sweeter and doesn't taste like gujju undhiu. This is Rajasthan eatery I think and they feel adding sugar in everything becomes gujrati. Actually undhiyu ...is bit oily and it has distinctive taste of all seasonal vegetables ...

Undhiu 👌👌 but i will see his teste so light not spicy. Like Surat type but in proper gujrat like ahemdabad Rajkot their people likes light spicy undhiu. Thali price is so rignable 👍👌

Whats undhiyo?
Undhiyo is a mixed vegetarian recipe. a lot of seasonal vegetables are used to make this. different kinds of root vegetables, raw banana, green peas, green pigeon peas, green chickpeas, lots of fenugreek leaves, coriander leaves, green garlic shoots, different kinds of greenbeans are all used to make this recipe. this dish basically is prepared so that one gets the benefits of all winter vegables in one dish. it is usually relished with Poori (fried bread) or plain flat breads. you must eat this atleast once in the winters. very healthy and nutritious.
