Room temperature eggs, preferably 1-2 weeks old. Boil/cook as you chose. Yes, peeling eggs in water, or under running water is very helpful. I still prefer electric pressure cooking to any other method. I've done 40 eggs at once, same amount of cook time and peeled 40 eggs in less than 15 minutes without losing any eggs to messing up eggs during peeling process.
With fresh eggs you have tap it lightly on a wood surface. Not to brake the shell but to brake the membrane inside. Try it. tap a couple of times and it going to make a small tic. Then you boil them as usual. Easy pealling.
This is this way I have done them for years. I steam my eggs in a rice cooker, then put them in ice water. Crack the entire egg, put back in the cold water and leave for a few minutes. Then I peel them under the surface of cold water, drop the shell back in the bottom, after you are done, just gentle pour out the water, the shells usually stay in the bottom and then just throw away.
I always peel my eggs while luke warm. I run water over them as peeling or put them in the pot of water and peel. I rarely have any mishaps. Love this recipe. It's a must try (minus the onion for me, due to allergy) but so many orher options as you mentioned. Yum!!!
I bought an egg cooker from Amazon and 1 from Sams. They work amazingly well. It cooks 12 at a time. I’ve used them for about 4 years and rarely have I had any problems with peeling ( even fresh eggs ) .
As for Peeling fresh eggs we have found that we use a instapot pressure cooker set on high and run for 5 minuets and vent as soon as they are done. They peel very nice and not very hard at all.

I'm another one of us that has tried every tip and still have some eggs that just don,t peel nice. I was also told yrs ago to set the egg carton on its side with pointed end of the egg in the bottom of the box. Setting it on its side was supposed to help center the yolk so when you peel or make deviled eggs the yolk in in the center of the white part. Also I saw a video saying to steam the eggs with 2 inches of water and a metal colander set in the pot to place the eggs into. Steam 20 min then cool down in ice water if you have ice or run under cold water and leave for 10 full min. To then tap the fat end and put into water to start the peeling. My friend bought me a small 7 eggs electric steamer for Christmas this yr even though she knows I love to do off grid projects. IT WORKED GREAT... I'm a rebel all the way I'll use it from time to time LOL I love making shelf stable pickled eggs. Garlic ones are my favorite!
Hi Cindy. I've had many people tell me that using an Instant Pot is the only way to go. Well, I'm not about to go out and buy one, but the principal of it is steaming them. I've had stove-top steaming suggested as well. I have done it that way a few times, and for the most part, it worked. Sometimes I need to coax the shell off by sliding a teaspoon underneath the shell. I did 5 dozen fresh eggs one time by steaming and only had 3 that the white of the egg tore. 😊

I had to make a makeshift canner tray once I used small canning jar rings and cut 6 slits into a throw away pie pan to help make it flat. I cut from the edge towards the cent 6 slits. I still have it but have bought 2 trays since then.
I use baking soda. Put it in the hot water after you are done cooking. I also have put the backing soda in the first rinse of the eggs. Just let sit for 2 to 3 min. Then rinse as we all do to cool the eggs. The. Peel

Crack them all over, then start peeling at the large end under running water, making sure to get the water under the membrane. There is ysually a small hollow space at the wider end and easier to fet under the membrane.
Ice in the water! Tap eggshells to crack and get that cold water between the egg and membrane by kinda rolling them in between your fingers in the ice water. And yes, older eggs vs freshly laid eggs
When you crack your eggs crack them all over instead of just one spot. Then pull back just enough shell with membrane to let water go between egg and shell. Make sure your eggs are cool before you crack them. I make sure I have plenty salt in them before they are on the fire. I almost never have a problem. Make sure they are not too old.

I have not looked, but doesn't proteins need 75 minutes (Pints) of pressure to keep? 1) will eat onions a thousand ways, but I find the taste of pickled eggs with onions in them "off-putting". 2) For easy peel, add a table spoon of baking powder per gallon of eggs and water as they boil. 3) After ten minutes of boiling, cool under running COLD water and then let them rest in ICE water for 10 minutes or until the ice has melted - works for my family. Hi Joey. Yes, you are correct. Proteins need 75 minutes for pints and 90 minutes for quarts. This is considered one of those "unconventional" canning recipes. The reason I WB canned them is because of the amount of vinegar in the brine. It lowers the pH level enough to WB can them. That's why vegetables may be WB canned if "pickled", otherwise you would normally PC them instead. You may leave the onions out. That's not a problem. To loose less eggs when taking the shell off what we have found to work is after boiling them for your desired time. Remove the eggs from the boiling water and put them into ice water for them to fully cool then put the eggs back into the boiling for about 20 seconds then peel. We have done this and has yet to loose an egg.
After boiled put in cold water for ten minutes. Break shells in multiple places put back in water. After a few minutes find membrane start peeling from there you can almost squeeze the egg out of shell.
I get the water boiling with some salt drop in room temperature eggs boil for 6 minutes Turn off heat and let eggs set until water cools ,Eggs pop right out of the shell easy .

Hi. You don't have to wait to hard boil fresh eggs or face the disaster of peeling them. My daughter heard of a method of cooking them that I use now. Clean the egg you want hard boiled. Put them in a steamer and steam for 20 minutes. Remove, place in cold water and crack all of the shell. Leave to cool for 5 minutes. Peel. I had never heard of this method. I don't cook hard boiled eggs any other way now. The shell almost slide off.
Hi David. Personally, that's not an area I would want to tread into being they've been sitting since May. The pickling brine helps as a preservative, but WB canning them is sealing them against any micro-bacterial organisms from entering into the liquid and food. I realize there are pubs that have huge jugs of pickled eggs sitting on the bar for sale, but they go through them fairly quick. I'm sorry to say, but my gut instinct would tell me not to eat them. I wouldn't want to be sitting in the deer stand and all of a sudden have a major attack of gastric abdominal issues with severe cramping, vomiting, and or diarrhea, and possibly worse. If they had been stored in the refrigerator the entire time, I'd eat them. I may do some unconventional canning, but I also keep safety at the front of my mind. That's my thought on this.

Hi Elaine. The vinegar to water ratio is 1:1. If the eggs taste really of vinegar, I'm not sure how to pull that excess flavor out. The only suggestion I could give is by adding more water and possibly a tad bit more sugar to the brine in the jar and allow the eggs to stir in that for a period of time (2 weeks?) in the refrigerator and see if that helps. If you try this, I'd really like to know if it helped.

Hi Paula. We're able to water bath can the eggs because they are pickled. By pickling something you are changing the pH level to a lower level that allows you to water bath can vs pressure can. The pH level of a plain egg is very high, meaning its very low acidic and would need to be pressure canned. If you are trying to preserve eggs to last longer, you could always water glass them instead. I've got a video showing how to do that and I'll be republishing it in a few days. That's what we are eating in our home right now, 8 month old water glassed eggs and they just sit in the counter. I hope this helps. 😊

You can steam them above water in your Pressure Canner for 20min. The shells come right off.
A chicken farmer once told me to add a tablespoon of vinegar to the cooking water to make peeling easier. It works even with fresh eggs.

I pressure cook my eggs for 6 minutes at 10 pounds pressure, or if I do not have a oressure cooker on hand steamed eggs also peel much easier

I think I'm going to try some with my old water glassed eggs and see how they turn out. I'll give a report on them or do a "short" video! Tomorrow morning I get to head over to the hospital bright and early in the morning for a CT scan and MRI. I guess it's my turn to get into the medical line along with the others in my family. My egg got really, really vinegary 🤦♀️ I don’t remember what the amounts were ? But I hate to toss them do you have any idea what I could do to make them more eatable ?
Hi Elaine. The vinegar to water ratio is 1:1. If the eggs taste really of vinegar, I'm not sure how to pull that excess flavor out. The only suggestion I could give is by adding more water and possibly a tad bit more sugar to the brine in the jar and allow the eggs to stir in that for a period of time (2 weeks?) in the refrigerator and see if that helps. If you try this, I'd really like to know if it helped.

Can you can just regular boiled eggs?
Hi Paula. We're able to water bath can the eggs because they are pickled. By pickling something you are changing the pH level to a lower level that allows you to water bath can vs pressure can. The pH level of a plain egg is very high, meaning its very low acidic and would need to be pressure canned. If you are trying to preserve eggs to last longer, you could always water glass them instead. I've got a video showing how to do that and I'll be republishing it in a few days. That's what we are eating in our home right now, 8 month old water glassed eggs and they just sit in the counter. I hope this helps. 😊
