Good show I have a Pit Boss 2 does a beautiful job 4 years now very happy I find Maple Pellets work really good with steaks also , about 8 cookings , i take it apart vac out pellet dust ! Love it

Butcher tied it for me, I wanted to season under the bones but I didn’t have any string. I picked some up so my next cook I’ll do that.! In fact I have a prime rib in the fridge now I’m getting ready to season and cook

Is that a Shun knife? If so, good choice! Oh, and wrap the heat shield in foil. Makes cleanup a lot easier.

About 5-6 minutes while turning it to get all sides.
Should have seasoned it before you tied the bones back on to season the bottom of the roast...
