@@maniac5877 might not be leftovers but he is just reheating what's already cooked....i can understand a sauce been made before service, but pasta it's a nono quality wise....you can still eat that dish, doesn't mean is terrible but i'd say all comes to price at the end, i wouldn't even pay 10 euro for this particular one with pre-cooked reheated pasta and not much sauce.
Love this style of video. Great work! That pasta water to heat the noodles back up probably becomes nice and starchy and helps thickens the sauce even more.

I feel like I'd be pretty proficient at that station, it looks nice and straightforward. At my current gig, I find myself running all over the shop, even if I'm only fixed to one station, which is pretty rare anymore. Miss this kind of simple flow.
I feel like I could do that too and I haven't worked one day in a kitchen. Unlike him in the video, I would also know to add a spoon or two of pasta water into the pan. This is maybe half a notch above grilling burger patties at some fast food place because of the pan flipping and the plating.
I have an electric range and I hate it. But Mr T gives me hope Like any job, work is only as useful as the tools you have. He does so much prep his service is awesome
I was front cookin for Vapiano for 2 years. The routine was kinda similar, but we had to do the dishes from scratch. We also grilled the beef, chicken, shrimps infront of the costumer and he could decide what to add. The good thing was, all the extras were prepared, like the vegetables were still raw but cut.

dude i remember it was always so annoying when we did the pasta bar in my college cafeteria cuz you needed seperate tongs, ladles and worst of all, mixing bowls for every sauce. when theres so many people ordering and they add the additional confusion of different kinds of pastas like fettichini or gnocchi it becomes literal hell

hello, I think this paste is a little overcooked. The noodles should hold their shape on the plate. Another thing is how it tastes. If eat this a worker in yellowsuit or a connoisseur of Italian gourmet food. For worker is everything good... Is it a hotel or a workers' restaurant? I feel strange to see people cook in induction stove lol In my workplace we cook noodle or anything in giant wok and big gas stove In my country its cheaper use gas than induction Its much powerfull to cook beef or tripe With wood/bricket easier soften cow tripe or intestines than gas stove (it need 1 hour/kg to cook)

nah fr this is probably more organized than most places and a set up like this i could easily do 12 hour days and have no issues

In my workplace we cook noodle or anything in giant wok and big gas stove
In my country its cheaper use gas than induction
Its much powerfull to cook beef or tripe
With wood/bricket easier soften cow tripe or intestines than gas stove (it need 1 hour/kg to cook)
When I say I think I could polish off that tub of noodles right now I'm being the utmost serious. Looks delicious and I'm starving.
