Lamb is delicious. Gamey mutton has to be cooked to fall off the bone or smoked. Fresher lamb is better than a steak. American lamb, most often fed with grain is less gamey than those lamb that graze. Dad's from New Albany/Louisville, Kentuckiana, the last time we were in the region, I had Kentucky style mutton barbecue, I loved it.

I ain't catholic, a mix of southern baptist & pentecostal from eastern ky., but i like slow smoked mutton over hickory wood better than lamb. I also like burgoo.

I've had the mutton at a few spots in Owensboro.....It's too finely chopped in my opinion.....The texture is like it has already been chewed up and spit back out on to the bun....
Sauce wasnt that great either.
