Milza ripiena - Stuffed Spleen

Ingredienti:
Aceto
Acqua
Aglio
Menta fresca
Milza di vitella
Olio extravergine di oliva
Pepe nero macinato
Peperoncino in polvere
Pomodori secchi
Prezzemolo fresco
Scorza di limone
Vino bianco
Preparazione:
Pulite i pomodori secchi sotto l'acqua corrente per rimuovere il sale quindi lasciateli in ammollo per almeno 30 minuti.
Riempite per metà un capiente bicchiere con l'aceto e la rimanente metà di acqua e vino in parti uguali.
Preparate il ripieno: lavate il prezzemolo e tritatelo finemente. Aggiungete a questo le foglioline di menta intere, una grattata di pepe, mezzo spicchio d'aglio tritato fine, il peperoncino fresco e le scorzette di limone tagliati a pezzetti.
Tagliate la milza a metà per l'altezza. Con il coltello incidete il lato tagliato per ottenere una tasca profonda.
Riempitela con il ripieno e pressatelo bene in modo che ci distribuisca fino in fondo.
Sigillate il taglio con degli stecchini.
In una padella inaderente fate scaldare dell'olio extravergine di oliva a fiamma moderata.
Profumate l'olio con la metà dell'aglio che vi è rimasta prima di aggiungere la milza.
Fate rosolare entrambe le parti per una decina di minuti.
Con una forchetta pungete la milza in ogni sua parte per facilitare la fuoriuscita del sangue.
Dopo altri 15 minuti versate nella padella il contenuto del bicchiere.
Fate cuocere a fiamma moderata e girando di tanto in tanto fino a quando il fondo di cottura non sarà ristretto.
Fate intiepidire prima di servire.

INGREDIENTS:
Extra-virgin Olive oil
Fresh Mint
Fresh Parsley
Garlic
Lemon Peel
Minced Black Pepper
Paprika
Sun-dried Tomatoes
Veal Spleen
Vinegar
Water
White Wine
METHOD:
Wash dried tomatoes in order to remove their salt and soak them for at least 30 minutes.
Take a large glass and fill it half with vinegar and half with wine and water in equal quantities.
Prepare stuffing: wash some fresh parsley and mince it thinly. Add some leaves of mint, a pinch of pepper, half thinly minced clove of garlic, fresh paprika and little pieces of lemon peel.
Cut the spleen in half in height. Slice this latter in order to create a deep pouch.
Fill it with the stuffing and press it well in order it spread out all the way.
Close the cut with toothpicks.
Heat up some extra-virgin olive oil over a middle flame in a non-stick pan.
Season the oil with half of the garlic left before adding the spleen.
Pan-fry both parts for about 10 minutes.
Sting the spleen on all sides with a fork, in order to simplify blood leakage.
After 15 minutes, pour the contents of the glass in the pan.
Cook over a medium flame and mix every now and then until liquids evaporate.
