  • In this video, I cook a simple, old-time favorite in cast iron - fried potatoes and onions. Featured in this video is my new cast iron AUSfonte sauteuse pan from SOLIDTEKNICS, based in Australia. This is a pretty amazing pan with a handle that does not get hot. Definitely a solid player in the world of cast iron!

    looks good man. i've been doing them the same way for a long time, with one exception. I cook my bacon first, then use the bacon grease to make my potatoes and onions. then at the end i pour in some scrambled eggs. once the eggs are done, add the cooked bacon and crumble/stir. dump it all in a bowl, throw a tortilla in the hot pan for a few minutes on each side, plop in your filling (add some shredded cheese and salsa if desired) boom you got the best breakfast taco ever. you'll be hooked.

    Jeff, absolutely perfect job on those potatoes!! Fried potatoes can be tricky to cook without turning into mush and you did it absolutely spot on!! I love that sauteuse pan!!!

      +TheWolfePit I would LOVE for someone to tell me how to get fried potatoes right in a cast iron. I have these damned potatoes in a skillet for over an hour at almost medium heat and whats in the skillet is either mush or burning to the skillet. Now the damned dog is whimpering under the table. :)

      +Aaron Zimmerman VERY minimal turning will help. The more you turn, the more the potatoes steam and break down to mush. That poor dog!!! LOL Hope this helps!

      +Aaron Zimmerman What Jeff said. It took me a few years to realise you don't have to turn potatoes every few minutes, unless you like mushy taters. Now I set a timer and walk away, or I wait until I can smell the browning before turning. You can think of it as the 3/4 rule in meat cooking. Cook the taters 3/4 done on one side before turning.

      Not mentioned: Start with the right potato (russet or baking potato). Almost medium heat is probably too low.

    I just made this yesterday and I'm just seeing this video for the first time today. Hmm...lol. I season them exactly the same way too. But I used bacon grease and I covered them with cheddar cheese and runny fried eggs. 😍
    I've never considered microwaving the potatoes first. That's pretty genius! Usually I start to fry them, then cover for a few mins to steam them, then fry some more. But I see that this removes a bit of seasoning from my skillet. I didn't notice it on the food, but on my towel when I wiped it clean.
    I'm fairly new to the cast iron world. I have a 10 year old Lodge 8SK (so far that's all) that was gifted to my mom but was never used and sat in the basement to rust. I restored it several years ago (including sanding to a smoother finish) and put a couple coats of seasoning on but I was still afraid of using it for a long time. Finally I started re-seasoning and using it a couple weeks ago and it's quickly give from light brown to bronze-ish to very dark brown.
    I've been using it almost everyday or several times a day since. I've never had fried or pan-seared chicken or potatoes come out this good EVER. I make them pretty good to begin with in my mom's 50+ y.o. stainless steel but they were phenomenal in the cast iron! ❤
    BTW that is a GORGEOUS skillet! I only just heard of that brand today in another video and I'm in love after watching you cook in it.

    The biggest pro tip for me was their microwaving the potatoes. I don't know why but I've never heard of that before and it makes it so much easier and I can't wait to try it.

    Thank you for your very informative video. I just purchased a Lodge 10" Chef pan from Amazon and was making a donation at the Salvation Army today and found a new 10" Lodge skillet. I seasoned both of them and my first attempt, other than the egg omelet I made this morning, was your fried potatoes. They were delicious!! :) I might try your Rib-eye steak next! I'm addicted to cast iron. Who would ever thought that was possible!!

      @@1230mkelly I just went on line to find it and a company called Davey Jones had the skillet in a 24cm pan. it listed for $119. Im not sure of the size is in this video but 24 cm is about 10 inches.

    Your suggestion of putting the cut up potatoes in the microwave for 5 minutes prior to the cooking pan was a very good one. I did this, followed your recipe, and the potatoes ended up being completely cooked in 14 minutes. And they were delicious.
