Pro-Biotic Cabbage Salad | Probiotic Fermented Cabbage | Chef Harpal Singh With Dhanashree

  • Pro-Biotic Cabbage Salad
    Ingredient Quantity
    Cabbage Shredded 1 no. (Small)
    Parsley 2-3 stalks
    Coriander leaves 6-8 stalks
    Radish leaves 2-3 no.
    Pumpkin Seeds (Soaked Overnight) ¼ cup
    Pink Salt 1 tsp + ¼ tsp
    Whole Black pepper 8-10 no.
    Cumin seeds 1 tsp
    Honey 2 tsp
    Apple cider Vinegar 2 tsp
    Method:
    1. Take shredded cabbage in a mixing bowl, add pink salt and mix well. Keep it aside.
    2. Take grinder jar, Strain the pumpkin seeds and add to the jar.
    3. Add parsley, coriander leaves, radish leaves, whole black pepper, cumin seeds, pink salt, honey
    and apple cider vinegar and grind well.
    4. Add little water and grind to a smooth paste.
    5. Add to the cabbage bowl and mix well.
    6. Remove in serving bowl and serve.

    Happy to see healthy food on your channel,I always used to wonder why any famous chef doesn't make these kind of video ,which are really good for mankind....even if one doesn,t get million views ...sense of satisfaction of doing good will definitely be there...Just searched and found many healthy recepies on ur channel.........Thanks a lot chef for this series .🙏🙏

    I am really surprised that this video has been out there for 2 years and I am seeing it now. This is by far THE BEST food I have ever ever come across. Lady Dhanashree is very very endearing and believable, genuine and so knowledgeable. I endorse almost all her truths, as I have heard of these and do practise them all. She is sharp and very very good and I look forward to finding more of her foods here. There was just one thing that I had a question mark over: using the soaking water of dals and rice. I do feel that the phytates released during soaking remain in that water so I have always discarded the soaking water. One qs for you Singh sa''ab and Dhanashree: can I toss the cabbage on extreme high flame for 15 seconds before I do the rest of what you have shown? Only because vegetables in India travel through a very gross supply chain and the high flame sauteeing will render them safer. Do kindly tell. And you did not wash the cabbage, that worried me. But all in all amazing amazing amazing dish.
    As for fermentation: only the pumpkin seeds were soaked overnight. How does the cabbage ferment here? Please help. Fantastic dish. God bless you both.

      Ok so fermentation happens if you leave the cabbage for six hours and then mix the dressing, we showed in a rush..... Cabbage worms are clearly visible if they are present just avoid that cabbage.... you can pre rrinsh the cabbage before cutting and remove the bruised outer leaves..

      @@chefharpalsingh Sorry for coming back with one more question. Could you kindly explain the fermentation procedure? So we add the salt, massage it into the cabbage and leave it IN THE FRIDGE for 6 hours? Now because of the salt, there will be some water that gets released. Should that water be discarded, removed? Because when we add the dressing the entire salad will become weird.

      That salty water that comes out is fermented after some time and is full of good bacteria. The salt actually prevents bad bacteria from multiplying.So please don't discard it. That is the pickling liquid.

    Just it is cabbage salad in green texture but how can be called probiotic? When no curd added or fermented earlier keeping? Or by apple cide vinegar adding in grated cabbage called probiotic salad not clear.?

    Super salad, loved it n yet..
    After adding salt into cabbage n crushing it with hands, did you squeeze out the juice prior to adding the dressing?
    Whats the objective behind making the cabbage limp? All nutrients are already there why crush n make it limp ? Nutrients get released when you add dressing right?

      Ok for probiotic you need to keep the cabbage for at least 6 hours.. and then squeeze and add the dressing..

      I mean we did as a straight process if you keep the cabbage with the first addition of salt for 6 hours early stages of fermentation begin

    phitic acid washes out in water. So his can you use that water even if you have washed the daal before soaking.
