How is it that it's more profit per box when buying vs making it yourself? Shouldn't the option with less/no investment net more profit?
The difference is in mastery. I, and other endgame cooks, can make guru meals *much* faster and more profitably than someone with less mastery, so prices reflect what's profitable for us instead of low-end cooks. Especially since we've just had an event that gave us +100 mastery and -1s cook time.
If your mastery is on the low side, the calculation that you made is perfectly correct!
is there any way we can get the exact value of the crafts needed for the profit/hour in the bottom right section?
You can adjust the craft quantity until the time displayed in the bottom left is 1 hour. Unfortunately there is no button that will do this automatically.

So if I want to process something, and buy all the materials from the market and sell the final product, should I check "Tax" and "Keep"?
If you collapsed the processing recipe (i.e. you don't take processing into account for the calculation you want to do), you would tax the output of the processing material only. Any materials bought from the market should not be taxed, and any materials sold to the market should not be kept.
So if I wanted to compare let's say the profit of dark pudding and organic feed. Do I just put all the mats I have as taxed? Thanks for this helpful video starting to enjoy lifeskills again. Hit the 250 mil/hr mark hunting I'm happy with that.
If you have the items lying around and want to know if doing something with them is better than selling to market, yes, you would mark them as "taxed."
However, if you are planning for the future and plan to buy x ingredient from the market, you would not mark it as "taxed."

how lucrative is end game life skilling now-a-days with most valencia grind area's being reworked.
Assuming the same silver investment, the same player skill, and only meta classes used, gathering->cooking and hunting->cooking are both roughly the same amount of money as grinding, per active hour.
Cooking comes with the con of needing to afk a few hours, but grinding also comes with the con of not being able to efficiently use afk time and the need for yellow loot scrolls (otherwise gathering/hunting->cooking outpaces grinding).
Most lifeskills depend on the market far more than grinding does, so this answer may differ per server and time (e.g. a few months ago on NA, end-game lifeskilling >>>> grinding), so I can only answer for NA at the current time.
