- Fluffy Buttermilk-style pancakes have always been my go-to when I feel that Saturday morning pancake craving kick in. Give this recipe a try and just remember not to overwork the batter.
Buttermilk pancakes recipe:
2 cups all-purpose flour
2 tsp baking powder
1/2 tsp baking soda
1/4 tsp Maldon salt
1 1/2 tbsp granulated sugar
2 1/4 cup buttermilk
1 tsp vanilla extract
2 tbsp unsalted melted butter
2 large eggs separated

Dear Sonny, I was extremely happy to see this simple recipe, on a day when I've been remembering the past and family members lost over the years.
My grandfather would make these, almost the same as you, on special Sunday mornings inviting the entire family over for brunch at his house.
He taught me to make them, when I was maybe 2 years old, sitting up on the kitchen counter next to the stand mixer as he would whip the eggwhites, and he would always be so gentle folding them into the batter later.
Thank you for this, I am now remembering my grandfather especially this new years!

As the self appointed family pancake master I will definitely try the whipped whites method! I've had good results adding a bit of lemon juice to my batter and that seems to help with the fluffiness as well. Happy New Year!

Made this this morning and it was great. This recipe makes about a dozen 4-5” diameter pancakes. Definitely fluffy.
Mmm these came out perfect- fluffy and delicious! I used half all-purpose and half whole wheat flour, and added the sugar to the flour with the other dry ingredients (baking soda, powder, salt) since it was listed but not mentioned. Cooked em in a big batch on a 375* griddle and served with butter and Canadian maple syrup. This was the best way to use up leftover buttermilk. Thanks chef, this one’s going in the permanent recipe rotation.
This is the first recipe I've found that actually DOES make fluffy pancakes. This is the forth time I've made this recipe and it never fails. For the first time I will purchase something that supports a TH-cam channel. This channel deserves it. Thank you so much for all the tips and explanations. This is actually the old school way to make waffles (i.e., whipping egg whites and folding them in.) You could use this same recipe for waffles too by simply adding at least a stick of melted butter to the batter. The only difference between pancake and waffle batter is the ratio of fat. Waffles are loaded with fat. I already have the waffle iron plug in. 😃
