    Hey man, love the vid!! What way did you prefer? Also, did you have to rotate them for even temps? I just picked up my first Old Country Brazos and have been checking out your videos. I am a stone cold noob to offset smoking. I started with pellets and then went on to WSM and now moved on to real BBQ. Had my first smoke last weekend and man... this king of BBQ is very next level. In process and flavor! Anyway< just wanted to say thanks for the tips here. Going to do ribs this weekend for the fight. Four racks also.

      Welcome to the channel! You bought a fantastic smoker. Some people have said the Brazos is a "starter offset", but to be honest, I'll never get rid of this thing. It does everything I need and the finished product is fantastic. Regarding the rotation, the main thing to remember is that you never want to put racks close to the firebox. So, I do two racks on the bottom shelf (close to the smoke stack) and two on the top. I *do* have to rotate the top two, as the one closest to the firebox will cook quicker. Note, too, that if you're using that top shelf, you'll need to be cooking St. Louis or baby back ribs: spare ribs won't fit up there without trimming them down first.     My wife and I refer to ourselves as Butterton's and I call a roll a butter sponge! We now have realized that we are just amateur's

      I believe it was Confucious that said that "there's always someone who uses more butter than you." Pretty sure it was him. Certainly didn't just make that up on the spot. ;)
