Donal, we always had Irish stew for St. Patrick's Day when I was growing up. Never Corn beef in cabbage. I was told that the Irish Americans learned that recipe when they lived next to the Jewish families in the US. Btw, I Knew a Donal in Galway Donal Tehaney. He taught at UCG. any way it looks amazing! I have never cooked Irish for my family before(nor do we celebrate st. Patricks in the Netherlands) but they really liked it! I am an 17 year old who likes to cook for his parents/siblings. Thank you for the great recipes!
Correct me if I'm wrong but traditional Irish stew was never made with Rapeseed or even olive oil - in many rural places those oils were not imported till recently. Tallow, Lard or butter were used and they all taste million times better than any oil. I don't know why so many chefs nowdays use odourless oils instead of those natural beefy nutty fats that are bursting of flavour and aroma and will instantly infuse anything you cook in them - veggies or meats. Try it and see for yourself, you will not be disappointed. Moreover - you would make your grandma proud of you! ;-)
Your research is impressive but I live my life by the last blood test my doctor had me go through. After a year of avoiding butter and living solely on olive oil, I got my triglyceride levels down to a normal level. So with all due respect to your grandma (and mine) I'm going to stick to a minimalist diet.
Everyone in America thinks of corned beef and cabbage as the traditional St. Patrick's Day meal, but my mom always served lamb stew, much like you had. She often browned the lamb, then added it all into a crock pot for the rest of the day. The aroma was heavenly by dinnertime! This looks absolutely delicious! Happy St. Patrick's Day!

Col Beard i do know that. i have friends of different faiths who cannot have any alcohol, evaporated or not, in their dietary restrictions. and this recipe just made it easy for us cooking for dinner parties w/o having doubts that the taste might be less delicious.
The reason you can't is quite simple we have 100s of different accents.His is a dublin 4 accent which is an upper middlecass originating from dublin 4 in dublin ,but someone who has that accent is not necessarily from there ,people from that particular class have that accent,not all of them ,but a good many. for example i am irish ,but they are some accents in ireland that even i can't understand
I had Irish stew when i was growing up and made it myself a few times! We had it plain! Potatoes,onions and lamb layered in a casserole and cooked till tender, no add ons! Just plain onions, potatoes and lamb, although we used lamb chops and a little rosemary for flavour, we would use a fork and squash down a few potatoes into the juice and the rest of the potatoes were kept whole! I am sure back in the day in Ireland it wouldn't have been as fancy! We did add cabbage on the side as a green vegetable! I have noticed all modern day chefs add this and that, not saying these interpretations aren't tasty just saying back in the day more simpler i would imagine!

I make this but with 2 teaspoons of dry thyme, 2 tbsp of Worcestershire sauce and a couple of cloves of garlic, I also put dumplings in and just chop up the potatoes It’s utterly delicious and last time my sister ate so much she thought she was gonna be sick!
Watched this tutorial this morning and decided to have a crack at this dish, dead simple, browned my lamb, then used the pan to soften the veg, added the beef stock and put the lamb back and added those sliced potatoes..... Next time I’ll make double the quantity it was fantastic!

why not finish cooking on the stove with the lid on or off 2:57 and flame the food for crispy top?? why put the entire pot in the oven to waste so much fuel AND more chemicals to WASH the POT that has all the food burnt on to the edges and the sides. is this really ways to destroy more environment and water by polluting it with so much chemicals and use so much sponges and water to scrub it 3:32 all of and after awhile TOSS THE POT and waste more resources on planet to remake the pot to recycle the pot? every item make costs environment because during the make and recycle of item pollute the environment now and future? I just had a wonderful lamb stew! And now that I eaten most of the potatoes and carrots and meat I'm going to take the rest of the meat that's left over and make a pot pie with peas and carrots a nice biscuit crust on top

Tried this recipe out a few months ago but used beef meat instead of lamb and I'm re-doing it again today on this cold December weather. It is sooo delicious and a must try!

Jaysus my mammys stew is a lot different than that! First of all we use beef and mince balls and we put the spuds in cut in half and allow them to cook with the meat and the veg all together. Also it's a stew so you're supposed to stew it not bake it in the oven?
I amended the recipe by adding a little paprika, butter beans and tinned plum tomatoes, sprinkled a little thyme on the potatoes and it came out fabulous. Probably not a stew anymore and heading into goulash territory but who cares it was tasty!
I have a question: can I follow the instructions up to the point just before the potatoes are put on top and instead of putting the potatoes on, allow the unfinished stew to cool, put into portions (I live alone) freeze the individual un-potatoed portions, the lamb would be only partially cooked at this stage, defrost when I want and THEN finish the individual portion with potatoes and butter, cook in oven and thoroughly enjoy? Would the lamb become tough due to twice cooking?
