    Christmas of 1988 Costco had a triple layer coconut cake. It was huge, delicious, moist. This cake takes me back.

    My mother in law made this cake quite often. I’m in my late 70’s now but I still miss her bake goods. She was a wonderful southern cook. She made huge cat head biscuits and corn bread muffins fresh every day of her marriage. They never ate sliced white bread. Such a treat. 🥰❤️❤️🧓🏻Texas.

    7:48 I AM SO GLAD YOU SAID THIS! I thought I was going crazy because every time I would make a box cake, the past 10 years at least, I would think, “I could’ve sworn these layers used to come out thicker than this??” and I thought maybe I was doing something wrong! 😫 I should’ve known they were making them smaller though! 😄

    Oh, Tammy, I am not a very good baker at all so I doubt I will even attempt this one but I've had some really good coconut cakes in my life, but I don't think I've eaten one as good as yours looks!! Oh my goodness, that was stunning and you have obviously made quite a few of these. What a precious gift from your Mom to have learned how to bake and decorate like you do and it keeps her close in your heart to carry on her legacy of baking such a gorgeous, delicious cake like that one during Christmas. ❤

    Hi Tammy! It took only one time of making this cake before it quickly became a huge fave with my crew!     Thank you for this recipe. I remember as a child when an older woman in the community would make a coconut cake, and sell them. She never shared her recipe. I remember the icing being fluffy. I believe your recipe was how she made it. Thank you again. One day I will try it. Maybe at seventy.

    My Mama made the best Coconut Cake from scratch here in Georgia you ever tasted! She used Birdseye Coconut soaked in creme of coconut ... She did it just like this! So moist and so good! My Daddy favorite cake in the world. He called them, Sawdust Cakes bc of the coconut. Lol. I miss my Daddy and Mama so much! I'll see them soon when the Lord Comes to carry me home, Amen.       Ladies, You dont have to be a experienced cake decorated to ic e a cake! Anybody can do it! I've done it my whole life and so did my Mama. Actually anybody I ever knew can do it! Just let your layers cool good and ice your cake!

      I just saw yesterday that you can now purchase White Lily on line grom flours to cornmeal etc.

    Chlorine makes White Lily more like cake flour than other all-purpose flours. But there again is another subtle difference, ...While White Lily can be used in cakes, it is not bleached as much as cake flour, which gives White Lily a better, less acidic taste,

    I can not get the frozen fresh shredded coconut in the freezer section. Can we use the Bakers coconut along with the other ingredients for the topping? It looks SSOOO good!!!

      Bakers would not work you would have to use a real coconut and get out the flesh

    Every Christmas, my grandma would make chocolate pies and coconut pies, and that would be our desserts. So we have always made kept that tradition and her recipe of course. I had never had a coconut cake until I found the new Dolly Parton cake mixes and she has one for coconut cake. So I got that and made it for our family reunion this summer, and it was a hit! It was soo yummy! I would love it if you got the same cake mix for the coconut cake and make it to see what you think about Ms. Dolly’s recipe! I’m super curious to hear what you think about it! 😃🙏🏻🩷

    What keeps the cake from becoming soggy Ms. Tammy? With the coconut being so “soupy” as you put it, would it not cause the bottom of the cake, at least, to become soggy over time? I thought maybe the icing might be a barrier, but the bottoms of the cake layers are lying on top of the coconut layer. Thanks for any info! I can’t wait to try to make this cake and I just want to make sure I’m making it right. ☺️🩷🙌🏼

    I use the cake pan wraps. The cake layers are level, get done and remain light on the edges. I am lazy. I use the parchment liners.

    Hi Tammy, I live in West Michigan and can’t find frozen coconut anywhere, I have searched everywhere but it’s not available, what should I use I place of the frozen coconut? I don’t think Bakers coconut would do it justice if being moistened with cream of coconut.

    Tammy. This is off topic of your beautiful cake, but I just got through making a gallon of sweet tea. It got me wondering how many gallons of sweet tea have I ever made?
    So. I started making sweet tea by the gallon about age 14 by myself.
    Sweet tea lasts about 2 days at my house.
    So I think 183 x44 years I think.
    I think I’ve made approximately 8052 gallons of sweet tea. I thought this was funny😂
    How about you how many gallons have you made?❤
