So, I have to tell you, I was watching this video laying across the bed and my husband was watching wrestling. He asked me what you were doing. I told him. He wanted to know why can ground meat. We had a really great conversation about this and guess who want me to try it so he can see how it works...:) Finally he now thinks it might be a good idea to can meat!!!!!!!!!! Thanks Linda!!
How long canned meat last .
Love your canning videos. I have used your method for canning ground beef and you're right - best texture and taste this way. (Especially with Zaycon meat.) Here's a tip. If you need to protect your hands from hot jars and that canning mitt is too big, try using inexpensive gardening gloves - the thin kind you get at Costco or similar stores in multipacks with the rubberized palms. I reserve one pair in these packs for canning. They are thin enough to get a good grip, and just thick enough to keep you from burning your hands for short grabs -- like tightening lids.
I appreciate it when you and others take the "for dummies" approach, not skipping any of the "everyone knows" steps . . . because there are many of us who have zero experience and need it explained in detail. Thanks.
Linda, you have inspired me to try so many different things. Coming from a farming background, you brought back a lot of memories of the "good old days". Watching my mother, grandmother, and great-grandmother doing these things. Even though I can't afford some of the things you have, sometimes just watching your videos make me feel better when I'm having a rough day. Thank you for all your detailed information, your enthusiasm and recipes. I watched all your videos many times but I get excited when a new one comes. Please keep up the awesome work!!!!
Alot simpmer times back then. It was an entire family ordeal when it came time to put food up. I miss those days also.
This is a great idea. I've canned some pickles and pepper jelly, but that is about it. I'm glad you brought up the point about using the ground beef when camping. We camp quite a bit in the fall through spring and this is definitely a time save when in the woods.
I love to have home canned meats/proteins on my pantry shelf. It makes for a quick meal when you've had a busy day.
Love how you explain things and how clean your work area is.
Thank you so much!!!!
I've started checking out your videos because of Make it March.
I love the canners that explain the whys.
I know not to leave my jars in my canner to cool off and I've seen other TH-camr's leave them overnight 😱. Thank you for reminding us of the whys. It is a huge positive service for many of us.
I'm going to buy my ground beef on sale tomorrow and can it for the first time. I've done other types of meat and now I can add ground to my knowledge. Thank you.
I have never canned hamburger meat but now I am going to. I love the convenience you have when you have a pantry. I really like your idea of buying things on sale and canning them. This is totally new to me and I bet to a lot of us older gals that are used to canning in the fall when our gardens are coming mature. Great idea instead of a garden you are using Costco. Helps a bunch when your tired or don’t feel good to have it in jars. THANK YOU for sharing!! Keep the videos coming!!
love your videos u fave me the courage to start canning and pressure canning
Glad to hear you say ground turkey can be canned. Thank you. I love the four jars lids my favorite.
I always dehydrate ground beef when I have big batches. I'll be trying this next though. I've been planning on searching for canned meatloaf, also.
I was all ready to ask for it, but you mentioned it in the video. Can't wait to see some recipe videos with the canned beef.
Thnx for sharing!!!
I ran out of freezer space and needed to get my lean ground beef done up today! This video was quite timely for me. Love all your videos even though I don't comment.
Linda, I love watching your videos!! I remember canning with my grandma when I was a young girl and I would really like to start canning on my own!! Trying to get up enough courage by watching your videos and a few others!! But I have to say I do like all your canning and baking videos the best!! Thank you so much for sharing with all of us out here!!😇
absolutely beautiful!!!!! and what fantastic advice and information!!!!!
The Kneady Homesteader ....I can watch your channel all day long and have already watch all of them so hurry and make more videos lol
Eddie Levario hahahahaha THANK YOU!!!! Linda wants me to do some day in the life clogs. She challenged me. So I may film one tomorrow and take you guys to Aldi's with us. Hahahahaha xoxoxoxo
The Kneady Homesteader ....awesome
The Kneady Homesteader thank you I see too many people doing things that they shouldn't be doing and I just would love to have helpful hints out there that make this process safer more fun
The Kneady Homesteader and yes but everybody challenge the kneady Homesteader to start vlogging because I for one want to hang out with her everyday love love love her!!!♡♡♡♡♡♡♡♡♡♡♡
I have my great grands National canner, which is like the All American canner, I oil my rim on canner and lidevery few times, it helps to close and remove the lid easier...love your videos, I stopped canning when kiddos left home but forgot how much I enjoyed canning...
I do my research but take some of your tested advice also. You have great videos. Thanks for sharing. Peace and blessings.
Excellent information on canning! Thank you.
I'm using your video to can my ground beef. I bought the Better Than Bullion to use for the broth. They are processing now.
I'm also going to have to can my blackeyed peas because I wasn't thinking when I dumped my bag of beans to soak. I forgot I was making chili yesterday and that's to many days of beans. I got confused because my husband went shopping with me and he got excited about blackeyed peas. lol. So I'll also be canning beans for the first time. A plus.
Looks great! We don't add liquid so it's interesting to see how yours turned out. Great video Linda
Suttons Daze I usually do not add liquid either but when I came across this that jar of ground turkey and how good it was I thought I'm going to try it this way and see what happens and I'm going to let you guys know thanks for stopping by
I have canned ground round, ground chuck & venison the dry pack way & also the better than beef bouillon way. I still do both ways. Sometimes I just need the ground chuck & vice versa. Great video mama, thx for sharing!!!! XOXO Happy Canning!
My favorite canner, too! Use it all the time.
I’m going to try my first pressure canning session today ! Can’t wait to see my results . Thank you Linda for this video .
You know I am beginning to think I would like that smaller canner to Linda. I found an old American regular sized one in a mobile home back in 1971.. that is the one that holds 7 quarts. Several years ago I got the bigger one, I call it the double decker. The truth is often I want to can up a small batch of something and seriously a small load, when your busy really takes so much less time to process and cool down...I might order this small one..
Linda, I have seen you can ground beef with broth and just the dry canning , which way do you like better as far as texture and taste ? I have dry canned many times but have never tried the canning with broth and wondering if it is mushy ? Please let me know what you like best . Thanks Linda
I had a does of flat sour. In my case it was do to a mirro canner that would not open. I replaced that canner with an all American canner. Best thing I ever did.
I can't wait for you to tell us how the ground beef with the broth taste.
I love your enthusiasm...👍🏼. I grew up canning with my parents and have decided to get my wife and I a new canner like you use. I can't wait to try some of your techniques.
Once again you have inspired me. I have 40 pounds of the Zaycon turkey meat in the freezer that needs to come out and be canned. The pint and a half seem like a better idea than the quarts or pints. Thanks again for all you do!
Love your canning videos. I have water bath canned for years but watching you gave me the courage to try pressure canning. Have done a few things with success and now working up the courage to try meat. Think hamburger would be a good starting point.
how long did you can it for? and thank you love your videos
I sure hope I get into my apartment before this deal ends. so looking forward to getting back into canning!!
Hey girl, another great tutorial. I think I saw that same video you were referring to, about the person leaving the jars in the canner over night after they were processed. She turned the heat off after the processing time was up and that's how she left it till morning. Makes me realize why rules for proper caning procedures are quite strict and repetitive...sad to think the people that are following are going to get it WRONG TOO.
Thanks for the tip on the Better Than Bullion with the meat. I' can ground beef in pints (empty nesters) and will try that next time .
I don't know about ground beef but for turkey I pressure cook the turkey for 90 min at 10lbs pressure with a gallon of water, one onion and 3 heads of garlic and a tsp of Celtic salt. When done let it cool, pick out the turkey meat (it will be moist, juicy, and falling off the bone.) Can it in jars with the broth you made for 75 min for pints and 90 min for quarts. It will come out moist, tender, and taste deliciously roasted. We don't plan on roasting turkeys anymore. I'm going to try this with other meats as they go on sale.
This sounds delicious! Are you still happy with the results and have you done it again?
I love that small canner!
Love my canning!!! Thanks so much!!! Have a good afternoon!!!
Great video Linda and very informative, now I know what you mean about tilting the lid on the canner, and for how long. Thankyou so much :)
I've got a *bunch* of ground beef from the family farm, we had a steer butchered when my husband helped put up acres of fencing with a few of the guys. We got 1/3 of the steer. I've got the 25 qt American canner/cooker. =D My son bought me the canner for Christmas so that I can do up a bunch of canning. I haven't yet, but I certainly intend to. I even have a couple canning books. =) Research! You're so right!
🌾Merry meet 🌿
Yes I do
Thank you so very much for sharing the information you have. I had not heard about not leaving the product in the canner overnight. I have been and will change my habits immediately!
I have been watching you while I have been home so much with this virus and I love watching these, I use to can for family but I am by myself now and I am older and I have come to really like doing this so I have been canning, I would love to have an all American canner but they are not available now but anyway which one would you get if you were me.
Linda UR the beast!! Do UR research !!
:)
Linda's Pantry your beautiful and smart.
Thanks for explaining why you dont just leave jars in canner. Iv asked others several times but never got an answer. I canned 15 pts of bacon today. My very first cannings. I hav a tfal. Was easy. Thanks!!! 💞💞💞💞
I've sometimes wondered if coarse grind beef would keep a better texture?
Hi thank you for another great video - I have used your recipe for dry packed browned minced beef and love it. Are you no longer dry packing?
I canned chicken breast chunks last weekend. I browned the them with olive on med/high heat first then packed pint jars, added filtered water and 1/2 tsp salt. Pressure canned for 75 min based on my 675 ft altitude. Looked beautiful! I opened one 36 hours later and this terrible sulfur odor was present. From all the searches i did, it seems that "Browning" is not good.
The Chicken breasts were on sale at my local supermarket and had a sulfate additive listed on the label. The dogs don't seem to care but i think the smell is horrid! any suggestions?
I wish you would put your recipe on for us. You sometimes don't say qty of things, for example on canning beef. How much water and bullion do you use ??? Love your videos. Learning alot. Thank you.
I pick up my fourth round of 93/7 ground beef tomorrow, along with an order of smoked ham. I am so excited I can hardly stand it! I just love Zaycon. It's like Christmas every time I go! :) Did they ever offer lobster in your area? I got some back in November 2016 and it's awesome! It came out to about $4.50/tail. I plan on buying two cases next go-around! I've got whole chickens, pork chops, pork loins, chicken breasts and skirt steaks coming up between now and early April. Yay, Zaycon!!!
Thank you so much, Linda! I just love your canning videos.:)
Love your pot Holders! I'm a snowman fanatic. Lol
Just wanted to give people a heads up. The Maltodextrin is only in the Organic version.
that looks great. I am going to try it
I'm picking up my order in a few hours and I'm so excited! I want to put a meatloaf (uncooked) in the freezer, meatballs, freeze in 2 pound packages and try canning some with the broth. I feel like I should have ordered more😉
Thanks for the information in your videos, it is always good to hear the advice as a reminder or better yet to learn something new! Thanks again!
Well I canned 9 pints of my ground beef this way along with 4 pints of corned beef from corned beef that I had in my canner. I had one jar of the corned beef that did not seal because I had two rubber seals stuck together (tattler lids) which I didn't notice until they were in the canner. So I went back and watched your corned beef soup again and I'm making that for dinner tonight! See how much your videos help people out with knowledge and great ideas! Thanks so much!
Can't wait to try this.
Can you do a canning for beginners? With beginner items? Like a canner from Amazon or etc? Listing all the items you could need
Merrily S. Shes got a video i believe in its title it says canning chat and inventory
Absolutely love your show So informative.
Marla Knapp oh you're very sweet thank you I appreciate you watching
Thank you for sharing. 🌷
I come here from Doug and Stacy's channel.. I'm already hooked on your page!
How much of the bouillon did you use in the pan of water? Just trying to figure out the correct ratios
I followed the directions on the jar :) I made about 2 quarts
Definitely miss Zaycon!
What will you do with the broth when you use it?
I would love your sloppy joe recipe. I pick up my 40 ground meat tomorrow evening and will start re-packing it as soon as I get home. I believe I will mix and freeze 2 meat loaves, freeze meatballs, bulk freeze and then Sun. can at least 10 lbs. Thanks for the great videos!
Would love your recipe for your pork & beans (baked beans) that you can. Thank you
Me too on both please :-)
She has a canning video for her pork and beans. If you search her site you should find it.
Once I have can my ground beef in my mason jars and I make sure my Lids were sealed well how long do they last on the Shelf in a cool dark room
Awesome job has usual, thanks for sharing
Can you can various store bought seasonings in the meat? Taco, sloppy Joe's, fajita, meatballs etc?
Hey linda, can you tell me which canned hamburger you like better? Is it dry canned or what you did in this video?
Beginner here. I just pressure canned some hamburger, but completely covered the jars with water in the process. One jar of chicken too. Do you think this will be a problem?
Linda, did you notice a difference in taste using cast iron vs electric skillet?
Cast iron is always better if seasoned right. I'm my opinion lol.
Very nice! Thank you for doing another canning video!
CHEFTECH86 you are so welcome
Linda that's a lot of hamburger many purposes great canning skills .
I love canning ground beef. I use it for everything, tacos, sloppy joes, spaghetti, etc.
New at canning, can you do meats with water bath instead of pressure cooker?
Miss Linda. Ive bin canning my deer meat, and sometimes i have a jar that keeps bubbling long after all the others have stopped. Seems like it cooks more liquid out also, but there all sealed, this is after i get them out of the canner. do you know if this is a problem
I would love to have you sloppy joe recipe. My husband and I were just talking about me finding one because the canned ones can be pretty sweet. Can your recipe be canned? I also buy from Zaycon and love their products. I really like your channel and all you share. Thank you.
@bollief sloppy joes is my high school years favourite thing. My friends n I back then used to race to the tuck shop to catch some as they sell so quickly and by the time you get to the front counter, they’re gone. Excited about Linda’s sloppy joe recipe, I’m sure it’ll taste amazing. Love your videos Linda. What kind of broth you use, sorry am just not familiar what that is thou, I’m so new to this kinda thing, but I’m so interested. Thanks Linda xx
Thanks again for a great video. I was wondering where do you get the Better than bullion?
Excellent!! Thank you. Jeni and I have yet to can meat. This may have just motivated me to do so - Mike
Pratt Family Homestead it is one of the best things I put on the Shelf because it's the base of any meal unless you're going vegetarian LOL
Hi Linda, love, love your channel! Question, i watched your 2012 video on dry canning ground beef. This video is 2017, and you are using a liquid. Is there a reason, or preference that you can share? Thank you again! New canner here!
I prefer to use the bullion because I can use it in the recipe and it gives the beef a better texture
Approx how many pounds of ground beef do you think you have in a quart jar? I'm thinking a lot of recipes say one or two pounds, etc. Was wondering if you have an idea.
+Teresa ten Pas the rule of thumb is a pint jar will hold a pound of meat so a court would hold two pounds but honest and truly you've got liquid space in there it so it's not all compacted down solid
I just got an all American 925 for Xmas from two of my boys, yay!!! I have been watching your channel for a couple of years even though Ididnt have a
A canner. So now hopefully I will be canning up a storm this summer/fall after gardening season or as things go on sale. Your channel is def my go to because I feel you are so clean in all you do in the kitchen. And that has to be real important.
Which canning method do you prefer?
Dry canning or with broth?
Which taste best?
I have about 25 lbs I need to can.
plz let me know.
Thank you Linda
When you're done canning and you take your canner off the heat how long do you wait to take the weight off the petcock?
You don't move your can off the burner you let it come down naturally until it's at 0 and there's no more steam coming out from under the weight when you try to lift it 0 pressure
Linda, I love watching your canning videos!!! I do have a couple questions if you can help me. I want to can some meats. What is you preferred method for ground beef and for boneless chicken. My husband is sooooo picky about his ground beef and I want to make something that he will not only want to eat but will encourage me to can. Help!!
I love zaycon fresh I was so happy that you had said something about them,, they are awesome, just like your videos,, awesome.. can't thank you enough..
Once again great video! Thank you
Do you prefer liquid or dry canning beef? Doesn't the meat go mushy with water?
I would love your sloppy joe recipe and a video. I canned your enchilada sauce recipe and it is wonderful!!! I'm about to can my 3rd batch.
I watched your video regarding rings and leaving them off. Do you later take the rings off of your meat jars too?
Thanks
Another thing that causes evacuation of the liquid I'd if you don't keep it a steady pressure. If you get it up say 5 pounds above what you're elevation is and drop the heat to get it back to the right pressure and do it to quickly it will cause problems was well.
Does this apply when we heat & shut off? I almost always have problems with liquid loss. Thanks in advance:)
I pressure canned lean gr. Beef in pint jars, and after they cooled the next day, I noticed the meat is reddish in color below the fat line and brown above the fat line inside the jars. I did cook the ground beef before canning. In your opinion, is this a problem?
Nope not at all
Thanks! You've really been a big help and blessing to me! I appreciate your help. I enjoy your videos, they have given me confidence and encouraged me to pressure can. Have a blessed day!
You make me want to start canning! Great info! ❤
You totally should!!!
Awesome video! Thank you :) I have bought Zaycon for years and love them. I missed out on the ground beef this time, but have a bunch of chicken thighs and breasts along with sausage links and their roasts coming. The sausage and roasts are new things we are trying. Have you ever tried them? My local Winco has their hamburger on sale really reasonable, I may go back and get more to can up :)
love your cute little mat with jars on it that you put your jars out on! where is it from?
Love this!!
can you can ground elk and deer the same way? if so what kind of broth would you use
martha bickford absolutely you can do that and I would still use beef broth
Thank you. I learn so much from you. You have so much fun and love go in your videos
I am totally new to pressure canning. I finally got a canner. The "instructions" are not clear at all. I've oven canned and waterbathed a lot of things. But my new canner doesn't say how much water should be in the canner to start. Am I putting the water up to the neck? Or a couple of inches of water? If I have a second shelf in there do I need more water? Less water? I am frustrated. I feel like I'm going to loose product which I can ill afford. Does the round disc thingy go with the lip up or down first? Do I only need the disc for a second row of jars? Please help me. 🥺☹️🥺☹️
Hello! I tried canning raw chicken today under much stress. I added water enough to cove leaving about 1 1/4 of space. i forgot to wipe rim! Would it be ok to keep the jars in the fridge and use them in the up coming weeks being they might be bad?
Does the beef need rinsed of fat before filling the jars?
So what the smallest All American we can use the pint and a half jars in?
Thanks for sharing, great video
