and use schmaltz to fry your eggs or veggies in a stir fry - I freeze my schmaltz so I can have this treat all year. Super excellent video, fantastic for beginners and a great refresher for the rest of us. The first time I used my all american I did not open it in time, I ended up removing all the safety hooks and prying the lid off, carefully, and then I found out if I had turned the heat back on and let it warm up just a little bit, with the weight off to let steam escape, that the lid will release.

i get the same "suggestions" all the time with my canner about NOT using vaseline but I am a stickler....page 6 of the All American Canner Manual specifically states that you use petroleum jelly/ vaseline to lubricate their canners. their must be a reason for this. so....i stick to what the company tells me. so im with you on the vaseline, sistah!

Why do you can broth qt jars for only 25 minutes? I thought at a had to process for 90 minutes. I asked someone else this and she sent me to a source that said 90 minutes even though she did it for 25.

is it possible to create a broth then freeze them for later instaed of canning? thanks

    • @mrslocalvore5265
      @mrslocalvore5265 8 ปีที่แล้ว

yes you can freeze it instead of canning it. I do it all the time. I even use the canning jars. just leave 1 inch head space from the top of the lid and he careful with the jars in the freezer. You could use plastic containers if you like (I'm just not a fan of plastics but use whatever you have) Hope that helps.

Linda, you mentioned you are looking for another canner. You already have a smaller 4 at and you have an all american 921 so I assume you are looking for something larger. Well, i just did this so i thought i would share it. I started with an all American 921 and now have the need for something larger. You can purchase just the bottom of a 930 and use the same lid of your 921. They are interchangeable. Get the bottom with hardware and it's much cheaper than buying the entire 930. Of course, if you want to can with both at the same time you would have to get the entire 930 with lid. Just a thought!

Pinto beans for refried beans and baked beans for the hot summer months. Also spaghetti and pizza sauce. I cheat and use two 3lb cans of Hunts tomato sauce. 100% natural and no additives or preservatives. This will make 7quarts for me after adding seasonings, onions, and garlic. I use my tattler lids on jars I know I will be cycling through fast and normal lids on long term.

Have you ever used game bones to make a broth? I have several packages of bison soup bones so no meat on them just the marrow. I also have some bison brisket roasts all from my husbands bison he harvested in northern BC (I live on the southern west coast of BC Canada). I've had them in the freezer for a while now so I need to use them up and am thinking to make a broth out of them. I've never made broth before but I assume I would go about it similar to beef?

Just found your channel and I subscribed!! You are fun to can with!! I have a large crockpot of pork bone broth going right now.....I usually freeze my broth but this time of year I find my freezer space at a premium! 😅 So I want to can it.....but I was wondering how pressure canning affects the quality/gelatinous-ness of the broth. I heard high heat can ‘ruin’ the collagen.....do you know any thing about this? Thanks! ~Charlotte

question about the bones for poultry, can you use already baked bones, like we're have chicken legs for supper. can I save those in the freezer instead of throwing in the garbage? or a baked chicken, can I save those? I think you said you could, but wanted to double check before I sectioned off a space in my freezer. my hubby and I are starting to have joint pain and I know this would help. just thinking of different ways to use everything and not waste. thanks for the videos I love watching them.

I made some chicken stock yesterday and canned it in pint jars, my way of thinking is I can always open a second jar if I need to. I totally agree that homemade is better then store bought and it gives me the satisfaction of knowing that I know exactly what goes into my food.

  • @goodmorning713

I had an extra frozen turkey that someone had given me so I thawed and deboned and bottled the meat. Then I took all the bones, the neck, skin and all that and slow cooked for maybe 12 hours or so. Then let it cool. Took the fat off the top. Then bottled the broth. It is SO good but let me tell ya, I don't know that I'll ever debone and skin a turkey ever again. Lol.

So Linda, what is the bone broth supposed to taste like ... rich chicken taste or a more watery, thin taste to add to soups. My expectation is more like Campbell's chicken noodle soup broth without the noodles and meat. Going to make something this weekend that is cooked in my ball electric canner and finished in my all american 921.

Bought a 2nd pressure canner last week, a smaller size as my stove at home is flat top and I don't want to risk breaking the stove top.
Followed this video pretty closely after watching it multiple times and now have chicken bone broth simmering since about 2.30pm, heading to bed after watching this video again, at 11.45pm. Planning to let it go tomorrow while I'm at work so I can finish up when I get home in the afternoon. I have to say the house has been smelling like roast chicken and stuffing all evening, it's a freaking amazing smell.

What is the difference between stock and bone broth?

Bone broth is simmered on low for up to 72 hours (48 hours is perfect too) to release the collagen and marrow from the bones.

Can you tell me where to purchase a large pressure cooker like the one you use. I very much want to start canning low acid foods etc. I’ve been water bath canning for years. Love your tutorials.

I'm so confused... Are you canning the water (like with lids and rings) or are they just placeholders, as in just jars filled with water with no lids set in place to keep things from moving around?

Do you still have to use lids and rings? I'm a very new canner and I'm terrified of breaking a jar! lol, is it safe to pressure can an open jar?

Rings, no. Lids.... depends on who you ask. There are plenty of people who re-use the lids and have no problems. IMHO, manufacturers want you to constantly be buying new lids, so that's why they tell you to only use them once. But if there is no damage to the lid and the seal holds, there's nothing wrong with it.
You also have to consider the legal ramifications as well. If the powers that be say it's ok to re-use lids, and someone gets sick, then they could potentially be held liable.
But if you're not willing to reuse lids now, what are you going to do when SHTF and you can't just go buy new lids ever time you want to can.

I'm not so sure that's the best advice. I would never reuse a lid that had been used to re-can something with it. It's not that they are after more money, it's a safety issue. You are more liable to get a can that unseals, and then maybe tries to reseal, especially the new lids. I do however, use the lids again on something I just want to store in a glass jar in the cupboard. I put an X on the top to show I had canned with it previously, and then I know I can use that lid to just store something dry in the pantry.
