    Just a suggestion; put the Celsius temp up in text when you refer to the oven temps, this helps a lot of international viewers :)

      @@joshuablack8221 we could, but the US is the only place that uses F and also cup measures so obsessively, the world has to convert all those recipes. Most use C, makes more sense to cover that, and therefore most of your followers (not a knock on OP, generally just good advice for any baker or cook etc)

    FYI - if your oven temperature is off, you can recalibrate it. Either by adjusting the back of the knob or by holding buttons on a digital panel. Check your owners manual for instructions.

    I wish I had watched your video before I had to go through adjustment after adjustment with my convection oven. It helps to learn from failure, but when I think of all the puzzlement and frustration that each failure left me with... It's amazing that you show us the visual results of various adjustments along with detailed explanation. That saves people like me lots of effort and time. Thank you!

    Thank you Vanessa for an excellent 101. I am a newbie baker, and am on the quest for a perfect chocolate ship recipe / procedure. I have tried several recipes (not yours, yet) and my cookies usually are puffed up and slightly dry and not at all soft and "greasy" like I would like. I have tried reducing the flour, and increasing the butter, but still never hit the perfect spot.
    I do have a new over thermometer for checking my conventional oven, but the thermometer can give me a wide range of temps with the oven setting on the same temp. Mine is an old (31 years) gas oven. Thanks for all of your help!

    can you upload more of these? like the things you learned along the way in your experiences, I would like to know for example how ingredients influence the texture (eg. an extra egg, or how to make something fluffier/lighter, more moist or chewy).

    yep! My oven is 25 degrees too cold and all my recipes weren't working out for years. Oven thermometer is essential.

    Great video.
    When I select convection on my oven, toaster oven & microwave oven, they automatically lowet the temp by 25°
    Be sure to check your owners manual to see if your oven does it before lowering the temp.

    this is great. I always grew up with my mum having both types in one oven. basically in Australia we call it a fan -forced oven (basically the fan that circulates the air ) and just a standard oven. lol us aussies use anything that is easier. I really keep to invest in that thermometer. thanks for the heads up with this vid.

    When using two trays in the oven for cookies do you have to rotate them halfway through.? Also if you're using the fan confectionate will they turn out the best with two trays or always go with just one tray please reply to me that would be great thank you so much love you Channel

    Ok, so I'm guessing you're suggesting the top rack. Hmmm, I'd say after 50 plus years of baking I know using the top rack will brown the tops of what you're baking because that's where all the heat goes. Bottom rack they get a dark bottom because that's where direct heat is. And from my experience in baking the middle rack distributes the heat evenly. Maybe you should have made that little tidbit of knowledge available considering you're supposed to evidently be a pro at this. Keep in mind not everybody has a convection oven so talking in circles doesn't help. It would have been simpler to say "When cooking in a conventional oven use center rack and when using convection oven use top rack

      See? You were absolutely right! I preheated my oven to 350 and even after 15 minutes, it was at 300! It slowly climbed up to 350 degrees

    Why is it important to pre-heat your oven? Does it really make that much of a difference?

      It does because you need to be on the right temp to jump start the cooking or baking process. If you put your cookie dough at an oven that isn't pre heated, you won't have a consistent heat and the oven will need to reach whatever temp you've set, and your cookies will also go in line with that, making it an uneven temp with undesired results.

    If I reduce the size of the pie from 10" to 8", to 4", do I need to reduce the temperature and/or the length of the baking time?

    I have a convection oven in India n the highest temperature is 230 degree celcius . My breads nt bake at the time given in the recipe . They take longer . I use sourdough n made dinner rolls of ur recipe bt they turned hard . Plz help .

    I’ve never had an oven so I recently bought a mini convention oven from Costco. It’s a 1400 volt oven and I’ve been trying to bake. Last night, I tried to make cinnamon streusels and the recipe said to preheat and then bake for 15-20 minutes. There is no preheat setting on the little thing and I realized it heats up immediately. The streusels were ready in about 7 minutes. They were actually burning when I pulled them out. Maybe you’re right about the temperature not being accurate but what do I do about handling the time for baking? Should I just sit by and watch the processes and monitor it? I also did an experiment with half of the muffins where I put cupcake paper and half with a PAM spray. The one with the cupcake lining came out looking very nice and fluffy like how it should, but the one with PAM on it didn’t really fluffy up and was dense. Surprisingly they PAM one tasted a lot better too. Why is that?

    one question as well, i have a oven with a fan inside and im having issues when i try to bake breads, they raise very well inside however the external layer gets too hard like a sell. let me know the right temp for breads and if any other suggestion as well. please reply or post a new video if you like to talk about baking breads.

      after you remove your bread from the oven and brush it with some butter, take a room temp. damp cloth or towel and cover it. This way your crust will be soft. Also dont leave the bread in the oven till very dark brown.

    Hey can someone help me? How do I know how much I preheat? The cookies I’m baking needs to be baked at 180* and in 10 min, do I preheat at 180* and 10 min too then?

      Preheat at 180. After your oven gets pre heated at 180 put your cookies inside for 10minutes. Remove after 10. Ur cookies are done.

    The first ever dessert I baked was souffle and my oven is convection and convention. For some reason, I luckily succeeded. However, I have never baked one again after the trauma i got from baking it >< I probably have to start from the basics of baking I guess.

    You do not want to use a thermometer in a convection oven. It will not be accurate.

    alright so im from africa so our convention ovens work a little different and i was wondering if the same science still applies. we use steel drum and tiger saw to make slice in drum. then take sheet metal scrap from da foundry and slide dem in the slots, so now we have oven rack! some time two oven rack on nice drum! den we fill with charcoal or other village garbage like paper/straw/ and dry feed for live stock. i have russian gun seven six two. you say that we shoot the barrel with gun then poke in bamboo stalk that made hollow. then have child blow in bamboo to make air in barrel, make convection right? old used oil drum work very good, when you start fire oil residue light on fire, WHOLE DRUM ON FIRE! make all virus burn dead before make into oven. we no have cookie, but i toss big chicken inside and fire still burn from blowing air into closed barrel. kill chicken very fast and get hot to burn feather off. very thanks for video. we eat like king of England now. maybe fit baby pig inside for next cook and convection, hope pig die from suffocate and not burn. no pain.

      Mercedes Garcia by oven do u mean microwave or oven . For microwave u have to do 15-30 intervals along with mixing after every interval until it is melted and if u don't your chocolate will burn as microwaves heat unevenly and a part of the chocolate will burn while the other part would be solid chocolate so this is my advice/answer!!
