You never said what's in your brine, how to manage the pellets or wood chips, and especially how long to cook the turkey. You left out a lot of important details for people who haven't done this before. Looks good though. But I'll try the brining, but check out other videos on how to really do this.
I love everything you’re doing. The only thing I do different is I drop the temp to 225/250 after the initial 400 degrees (410 for 35 mins on a 14# bird) until 165 internal temp. Mostly to slow cook and stage it to be finishing up an hour before serving. In addition to brining, I do inject with clarified garlic-herb butter and am liberal with the dry rub. I use a blend of cherry-apple-pecan for my smoking wood and no more than 3 hours of a heavy initial rolling smoke. 35 mins per pound is usually good depending on external weather. Turns out perfect everytime and I’ll never go back to frying

I dry brined my turkey I started it on Monday night so by the time she's ready, it will have been brining for about 60-62 hours. But I always start off seasoning process with the bottom of the bird, I always get the difficult areas first. Then by the time I flip it upright I don't have to mess with it anymore just season the top side and send her in. Last year was the first year I dry brined my turkey and WOW it was the absolute best turkey I've ever had in my life. Then on Friday I threw the leftovers into a pot of collard greens and WOW again, it was the absolute best collard greens I've ever had. I've been looking forward to Thanksgiving for a few months now, that's how good the turkey was last year and it's gonna be even better this year. I never tried wet brining before but if anybody doesn't have a smoker and doesn't want to do wet, dry brining and roasting in your regular oven is not a step down or anything. It'll still be the best turkey you've ever had. I'm hyped to start cooking this bird 😆 Happy Thanksgiving 🦃

For actual smoking temp has to be 225 or less. Any more and it denatures the protein and won’t accept smoke. I noticed there is no pink ring from the smoke when you cut it. Try 225 for an hour then bump your temp up.

That being said, to respond to your comment: If there is no ring, there is no proof it's taken smoke flavor in (I can certainly taste the difference). If you don't care about the smoke, then use the oven.

@@datsuntoyy you can smoke something on the smoker and it might not have a very visible smoke ring. It’s meaningless.
Smoke ring implies your smoke is pluming and “curing” a layer of the meat. Presentation is nice but texture and taste sucks from it.
