Taiwan (Taoyuan ) International Airport
Taoyuan International Airport (IATA: TPE, ICAO: RCTP) is an international airport serving Taipei and northern Taiwan. Located about 40 km (25 mi) west of Taipei in Dayuan District, Taoyuan, the airport is Taiwan's largest. It was also the busiest airport in Taiwan before the COVID-19 pandemic which began in 2020.[3] It is operated by the Taoyuan International Airport Corporation. In 2016, it was ranked the best airport for its size in the Asia-Pacific region by Airports Council International.[4]
The airport opened for commercial operations in 1979 as Chiang Kai-shek International Airport and was renamed in 2006.[5] It is an important regional trans-shipment center, passenger hub, and gateway for destinations in Asia, and is one of two international airports that serve Taipei. The other, Taipei Songshan Airport, is located within city limits and served as Taipei's only international airport until 1979.[6] Songshan now mainly serves chartered flights, intra-island flights, and limited international flights.

I am Taiwanese, I can tell you it is definetely OK. The airport is not really large.
If no self-check in (meaning 2 airlines and 2 separate tickets), should be possible. The terminals are physically connected at 2 points so easy to run around
On my recent trip in February I found that both from Seattle via Taipei to Manila and return to Seattle 2 weeks later that the shops both times were closed except for the Starbucks. My wife had issues both times in Taipei but not in either Manila or Seattle. Since my wife is 78 years old and can not walk very far. I had request wheelchair assistance for her when I made the reservations. I had no issue Seattle either time and in Manila the airline made sure she had the wheelchair but both times in Taipei NO wheelchair for her. I then immediately requested from the airport staff that she needed a wheelchair and never got one. I ended up loading up our handcarry on a cart and then she sat on the hand carried. On the trip from Manila to Seattle with the stop over in Taipei I found a random unused wheel chair and I personally pushed the wheel chair to security check point where this rude and unprofessional staff accused me of "stealing" the wheelchair. I then got in a heated discussion of the manners of this person. I NEVER WILL EVER BOOK ANOTHER FLIGHT THAT HAS A LAYOVER IN TAIPEI.
Worst place in the world for a vegetarian . Glad I always pack snacks or I'd starve to death.
