If I may spread some of my knowledge here, these big boys are a good example of insular gigantism. Along the millenials, a species evolving in an environment with lots of food and no natural predators will keep becoming bigger and bigger. This specific species of crayfish just did that. They're isolated in Tasmania, so basically their ecological niche is very unlikely to be threatened by another animal, which means they aren't in competition with anybody for food.
The opposite happens when several species are belonging to the same ecological niche, they tend to become smaller because of the lack of food and/or the presence of predators.

I really don't think that is accurate. Just looking at the articulation of the crayfish's claws it doesn't seem to be capable of amputating a finger. The claws are meant for grasping not for shearing. Plus it takes well over 7000 psi to sever a finger.
All that being said. I'm not gonna do it.

My grandpa helped install a spring house along a creek on his farm. When they removed some large debris, he found a crawfish that was roughly 1 foot long. He said it was practically a lobster. Most crawfish in Indiana creeks are only several inches long. I remember in the 1980's in California as a kid I used to see giant crayfish that must have been 12" or larger (including tail). They were massive. And a bit frightening to a small kid. The creeks were teaming with life. But after the 1982 - 1983 great floods everything was washed away and never came back. And I think just to many people fishing and just to many people all over the place. Probably never see creek life like that again or of the sizes and quantities again. There was so much going on in the creeks back then.

Yep.. And crawdads love murkey.. as a rule they don't get big in clear waters. I grew up on the California delta. It's much like the bayou.. minus the gators. But it's thousands of nautical miles of black water.. And we had as many or.more crawdads than Louisiana. Our town had a giant crawdads fest every year. You can throw a trap down in in 3 hours pull up a hundred crawdads.. I'm not kidding.. a hundred per trap.
