  • This is a recipe on how to make traditional baozi. This type of baozi is common in Chinese cuisine - it is very delicious, juicy, and greatly enjoyed by everyone.
    Now you can taste authentic Chinese cooking in your own kitchen. Enjoy!
    Filling Ingredients
    1 LB ground pork
    1/2 lb pork skin
    1/4 lb shrimps
    green onion
    ginger
    pepper powder
    sesame oil
    salt
    light soy sauce
    Skin Ingredients
    3 cups all purpose flour
    1 1/4 cup warm water
    2 g salt

    OIC now, the soup that comes out of the xiao long bao is from the pork jelly! Always wondered why there was a gush of juice whenever I bit into it

    Some people are saying you can use gelatin instead of making it with the pork skin - well, you’ll get an OK result but nothing matches using the natural skin for depth of flavour. I’ve tried both when I make a homemade pork pie and I can tell you that using the pig’s trotter gives a 100% better result flavour-wise.

      not true. pork skin soup plus pork meat is very oily. not good.

      I used gelatin but my soup base was chicken broth, green onion, fingers garlic, little bit of soy sauce and mushrooms. Flavourful as hell

      You are right. Gelatin pales way too much in comparison to real Pork skin broth. I've tried both and even had friends taste both versions and every single person much preferred the real Pork skin broth dumplings. There is no comparison.

    I just followed your recipe and it's super awesome! sooooo tasty! although it took a lot of time, worth it haha. din tai fung and crystal jade are quite expensive so I couldn't go there to get some xiao long pao.;( I really miss the tasty of it. now, thanks to you I can make it in my house without paying a lot! thank you dear:D

    This looks amazing! I've had these at some of the best restaurants. In Asia @ Din tai fun & joe's shanghai, in nyc. But these look even more incredible! I must try one day! Very tedious work.

      the pork skin is not composed of fat. It is actually collagen, a very good ingredient for our body.

      Actually what u get is the collagen dissolved in the water, there is no fat in it, the heat melts the gelly turning it into a nice flavoured stock... Enjoy!

    oooh, I LOVE those! I've always wondered how they are made! Too bad they don't sell pork skin here... do you think adding gelatine to a broth would give a similar effect?

      Any good butcher may have pork skins or rinds. Just ask.

      Sechari Actually many recipes use that method. But if you can get chicken wings and make a broth with that, it will firm up when chilled as well. But it will not be as firm as the pork skin version.

      You can use pig feet. Better sub for pork skin or you can use gelatin in pkgs if you cannot find the first two. :)

    Hi yesterday I made Xiao long bao by using ur receipt.thz u so much for sharing it. But the skin for Xiao long bao is hard. I used all purpose flour like ur instructions. But skin is not tender. Could u plz suggest me what kind of flour should I used or the one that u use for this dough.thz u so much:-)

      Use the same flour, just add more water. Flours in different parts of the world can be harder than others, that's why you need to adjust the humidity... keep using all purpose flour or cake flour.

    Does anyone know what sauce people use to dip it in? i remember eating it once and someone said to dip it in the sauce but i dont know what it was made of... For all I know it could've just been soy sauce haha but I want to make it as yummy and authentic as possible
