Iberico Secreto - The Best Sandwich Ever?

This undoubtedly goes down in our books as one of the BEST "sarmies" we have ever made. This was the most amazing Iberico Secreto, the meat comes from Spanish Iberian pigs which roam freely and feed on a natural diet of mushrooms, herbs, grass and the all important acorns which gives it it distinctive flavours. The meat is marbled and juicy and so tender - you pay a premium for it but for very good reason. This is not your everyday cut but if you would like to try something exciting and new, go do your local butcher and ask if he can source some for you ( if he hasn't already bagged it for himself ).
