Hi I'm a first-time viewer here and I will probably subscribe because you are just fun to watch and it's neat that you had your children involved in your creations. That is the best way to teach your kids cooking is to let them be involved. I would like to share just a couple of things, when I was young my mom taught me to use a vegetable brush in water or running water to clean the skins before cooking or I found a thick washcloth is also good for scrubbing the skins either way it removes the dirt and the dirty taste while still leaving the nutrients and fiber that is in the skin. I grew up eating potatoes for my whole life and I've been diabetic for over 20 years. About a year and a half ago I felt the need to cut out potatoes rice pasta and breads to get my A1c down to safe levels because I did not want to go on insulin. So other than a year ago during Thanksgiving when my daughter made potatoes I only ate one bite of the potatoes at the end of my meal otherwise I haven't had potatoes in a long time but I still love reading and watching recipes and then of course sharing those recipes with people when I think that it will interest them. I have also learned to find substitutions for the items I cannot eat anymore. Anyways several months ago I don't remember where I read it but someone was in Canada and the folks said that this one place had the best mashed potatoes in the world so this person tried them and they were awestruck. They talked with the Chef and that Chef said that when they made their potatoes they used white chocolate when they mix them all up. They said it did not taste like chocolate but it gave a certain "WOW" to the flavor impact of those potatoes. I thought I would pass that along in case anyone ever wants to try it. Currently my A1c is down to 5.4 and they are reducing my medications and I am also down 130 lb with another 90 that needs to be come off. I will be using my glucometer the rest of my life to check and see how my blood sugars are after my meals and only foods that don't Spike my blood sugars will be allowed through my mouth. If you have any amazing low carb or keto recipes it would be neat if you tried fixing them and giving a review. I look forward to watching more of your videos in the future. Oh just a little fact that my mother would have said.... no you did not lie because a lie is intentional deception what it is is that we make mistakes and err with information... she got tired of hearing us kids calling each other Liars so she told us the definition of a liar and told us to cool it if you know what I mean. Just an encouraging note.

I love watching your videos. I slightly twitched when you banged the blade part of the knife on the edge of the pot. This can cause fine chips and dull your knives like crazy. It is great to see your love for cooking.

Great videos. You should do a pecan pie with the holidays getting closer. We ysed to go out to the garden grab a potato wash it. Sprinkle salt on it and eat it.

We always ate raw potatoes when we were kids. We hung around when mom was peeling potatoes and asked for a piece. We always peeled them before eating them raw. I still eat them raw occasionally to this day.
PUT A LID ON THE POTATOES. Cover the potatoes, turn on high. When it starts to boil, turn the heat down and vent the lid. They will be done in 15 to 17 minutes.
Just recently found your videos. I am enjoying watching what you do. You ask a lot of questions I would like to address but haven't yet. I did want to say I watched you try eating raw potatoes. When I was a kid I loved eating raw potatoes with salt. Although they would be peeled so they did not taste like dirt. And i sliced them up in thick slices. I don't think I would enjoy them so much any more. I am 69 now and a lot of tastes have changed. Thanks for what you do.. You don't have to be a professional to make good food.
Always use kosher (or sea) salt for cooking... The other can go by the user's taste... I usually go double garlic and add garlic chives if the recipe calls for it...

I knew you'd need a lot more salt in the water. Taters & pasta soak up the water so it should be very Salty like sea water. That way the salt actually is absorbed into the taters or pasta. In fact if your making soup or spaghetti sauce, anything liquid & you get it too Salty, you can cook a raw tater in it, & it will draw a good bit of the salt out of the dish so it's no longer too salty. I'm curious if the garlic flavor showed up very well. Just found your channel, & watched several videos. You're fun to watch. I actually used to always eat a small piece of raw Tater when I was a kid & my dad was making them. I liked them then.

Hi Dave, lovin all your channels but this is the best! Do you know the rule about cooking veg? If it grows under the surface you need to put a lid on the pot/pan, but if it grows above the surface you shouldn't put a lid on. Lid on pot to reach a boil faster. And look how much less steam is coming off the potatoes at the end of that shaking time: you go from clounds and billows to much, much less. All that water has been removed from your potatoes, making them taste better and making them a bit drier and less flubbery. After all, you're going to replace the water with milk and butter.
Use Boursin soft cheese, which comes in many mashed potato appropriate flavors instead of cream cheese and they will be next level. Roasted garlic is also good. For every day mashed potatoes I usually use similar milk and butter, but sour cream instead of cream cheese and they are always good. Curious if boiling the potatoes with the garlic and then pouring it off, if the garlic flavor came through?
Here is a tip… NOT A CRITICISM….. When transferring the garlic (or anything) to the pot with a knife, don’t hit the sharp side on the rim of the pot…. Hit the back side. This will keep you from nicking or otherwise damaging your blade and keep a sharp edge better. All that being said, a bench scraper is best and leave your knife for cutting.
Dave has discovered potatoes are cheap. I am very basic with my mashed potatoes. I use no milk. I use salt, butter and potatoes. That's it. Also, I like some lumps. They come out very stiff with this method, which is what I prefer. I don't like creamy mashed potatoes as much

It saves time peeling and they defrost quickly and many taste testers prefer frozen over fresh due to the crystalization during freezing 6) Hulk is stronger than Thor in the MCU 7) Just make a garlic herb compound butter with the remaining 2 tablespoons! 8) better to melt on the stovetop as microwaving butter sometimes has pops from the water evaporation and makes a mess and you lose butter 9) I've eaten many gummy and gluey mashed taters that are nasty 10) the shaking step also cooks the starch that coats the potato and helps prevent the gummy result some get that I mentioned earlier 11) may want to cut up the cream cheese as it will incorporate with less stirring 12) I like chives as a garnish, but scallions is a good choice too Looks good, nice job My favorite mashed recipe is the "Whipped Potatoes" from Cook's Country
A piece of raw potato won't hurt you - eating a whole potato or more may cause stomach issues ,- but it won't kill you Salt does help if you ear them raw. Raw corn is good tpp😁 You could use a spatula or spoon to move the potatos around I instead of shaking - but your way was truly dramatic viewing
In way of flavor, I always steam my unpeeled whole potatoes because in my own mind thinking I don't want any lost flavor or nutrients. But that's just me. But I did recently see a video where they swore that best way to prep potatoes before mashing is baking them whole with skin on for best flavor. I don't know but maybe Dave can try next time baking potatoes to see if better or not. Even though baking would make potatoes dryer, rhe liquids like melted butter and warm milk or cream adds moisture back in.????
Such a long process to cook mashed potatoes which is the fastest and easiest thing to do. I wash the potatoes then I peel them, cut into fours and boil them until cooked. Then drain them beat them with beater put the potatoes into baking dish add butter a lil milk or cream and put into oven until browned. Done enjoy. You can add other ingredients in after you mash potatoes if you wish😊😊
I am no expert but I think when it said 6 tablespoons.. it meant slices .. Butter melts faster in smaller pieces.. The problem is the cream cheese. So many cooks want to put cheese in everything, and after they do, then they relish shouting to add more cheese on top. You change a dish completely when you add cheese. It's not mashed potatoes anymore when you add cheese. I understand that cream cheese isn't quite the same thing, but nevertheless, the cheese thing is not a good approach. Cheese is great where it belongs, but not on/in everything.
Potatoes are way to small. Cut in half, turn, cut in 3 pieces. Just try to keep them all the same size, so they cook the same. You could have cut this time in half just showing one of each potato cut.

Potato & Apple do turn brown due to being exposed to air. Pro Tip not only put Apples in Water but Water with Lemon Juice in it.

Due to oxidation potatoes and apples both turn brown. Cold water stops it for potatoes and a little lemon juice for apples.

Cream cheese does not belong in mashed potatoes. Milk and butter is all you need to make them creamy and velvety.
The problem is the cream cheese. So many cooks want to put cheese in everything, and after they do, then they relish shouting to add more cheese on top. You change a dish completely when you add cheese. It's not mashed potatoes anymore when you add cheese. I understand that cream cheese isn't quite the same thing, but nevertheless, the cheese thing is not a good approach. Cheese is great where it belongs, but not on/in everything.

Potatoes are way to small. Cut in half, turn, cut in 3 pieces. Just try to keep them all the same size, so they cook the same. You could have cut this time in half just showing one of each potato cut.
