    I get introduced to barbecue the same way. Roadside stands with big ol' pits on the side of the road when my sister moved to Chattanooga. My dad would see one by the side of the road and pull over, getting a mess of pulled pork for the family. He didn't cook either, but he did love good barbecue.

    Heck yeah, I definitely need more recipes for side dishes! Maybe a spectacular mac and cheese?
    This one was pretty great as well, but sadly beans aren't as loved at the wrong side of the Atlantic as they are on the other so I won't get a chance to try this one out.
    I haven't been watching your videos lately, for some reason they just haven't been showing up in my sub box. I experienced the same issue with Troy's videos.

      I have a mac n cheese in the plans. If you click on the gear icon right beside the subscribe button on my channel, then you can turn notifications on, and you will be alerted by email when I have a new upload, also if you click on the subscriptions link on the left drop down just left of the TH-cam logo, you can see every upload for each day to people you are subscribed to. That's how I normally keep up with it. I get way to many emails, and some get lost in the cracks so to speak. Cheers!

    why do you have to hang the meat on the pit barrel if you have the grate there? Kamado and Green Egg are out of the budget, but I am debating a WSM or Pit Barrel Cooker. The WSM seems like the better buy with more versatility. thoughts?

      I hang the meat so I don't have to flip it to get the same color all the way around it. You can easily cook any meat on a grate, but the PBC creates a convection oven type of heat, and hanging the meat works very well. It's all in what your looking for. The PBC can not be dialed in for a specific heat, so you may be better off with one that you have more control over, but if you want to just hang meat and walk away, then this works perfectly.

    The Shed flopped in my city . The thing about Barbeque is that there is only one right way to do it ... that being the way you like it . Each region does it differently . Texas and Memphis barbecue could not be more different . Beef on one Pork on the other . Here in Louisiana we Barbecue chicken pork and chicken but use mustard based sauces .

      I didn't know the Shed had a place in Louisiana? The video you seen at the beginning is there original place and still going strong, but I would rather eat my BBQ any day than theirs. It's ok, but doesn't deserve the title as worlds best BBQ. I've had much better! I BBQ beef, pork, chicken, and beans lol ;)

      Barbecue chains never last here . It was around for about a year or two but word of mouth didn't favor it .

    Those beans look delicious. :) Once you've had some good homemade beans, it's hard to go back to eating that mushy crap that comes in a can. I don't have a smoker, but my slow cooker has gotten a workout.
    I like that you said that you couldn't really taste any of the Jack in them. I'm not a fan of the flavor of whiskey, but I do like to infuse layers of flavors into my dishes. I wonder if it would cook out in my slow cooker the same way as the smoker...

      Yes, canned baked beans can't even come close to a batch of homemade beans. I would recommend doing them in your oven since you don't have a smoker. The beans need to be uncovered for the 3 hours they cook, and a slow cooker has a lid and will not let enough moister out to thicken the beans.

    Oooh Yes. Those beans were looking fabulous...along the rest of the meal. I never tasted BBQ until I came here over 20 years ago and let's just say it wasn't love at the first taste...until I discover later on that it was the fault of the "chef" at the time & the wrong BBQ sauce. I sure are loving it now...& them side dishes too. I lost my favorite bean recipe so I should try yours ! Looking forward seeing more side dishes. Thanks Rus. :)

    Bbq just isn't complete without the right sides. Coleslaw and potato salad are art forms by themselves. You can make the exact recipe from someone else and it still won't taste the same. I love hash, and skins of low country South Carolina. And, Brunswick stew here in Georgia. Thanks!

    Rus, this is a wonderful, complex baked bean recipe! Complex at least for me! I love your tip on adding bacon that isn't yet totally rendered, so that the fat can flavor the beans. I was swooning as you were stirring in the molasses! Seems like the Jack Daniels adds something very special to the flavor! What a fabulous barbecue episode this was! Amazing!!!

    Funny story. My dad didn't have a smoker either...actually, I take that back. He had one and I kid you not the first time we tried to use it, he blew the thing up. I have NO IDEA how that happened but I know it involved lighter fluid and NOT reading the instructions. AlI I remember one minute standing there staring at the cooker and the next minute finding myself laying on the ground wondering what the heck happened. Once we figured out everybody was ok, we laughed till we cried. We still laugh about it, honestly, but we never had another smoker. lol. The irony is my dad is a good cook. He's a lot of fun too...always has been. My childhood is full of fun stories like this...most less dangerous but equally funny. lol.
    Holy crap, those beans look amazing as does that pulled beef. Ironically, I'm working on a pulled Beef recipe for Dave this week. This definitely gets me in the mood. lol. Another great video, Rus. Thanks!

    What is the quantity of Northern beans you used. Also, as I am soaking my beans they are wrinkling and splitting. Any idea why this is. They have only been in salted water for 3 hrs. Is this normal? Anyone? Thanks in advance.

      1 pound and I recommend Camellia brand. They are good quality. Just soak them in fresh water

    Great vid. Rus , your beans reminds me of Indianapolis bake beans that are a Hoosier's tradition on race day for the INDY 500 , minus the Jack Daniels of course , Us Southerners have to find a way to keep the Whiskey Still's burning , Ha,ha,ha !!!

    There's lots of problems with government regulations. The cost being the biggest factor. People weren't falling over dead eating from these roadside joints. The local, state, and federal , governments weren't getting their cut (taxes & fees). Therefore "regulations". I wanted to start a food trailer, but it's close to $900 alone in my city, and state just for the privilege of having one. I can turn $900 into $2,000 to $2500. I'll stick to catering out of my house.

    Looks good. For BBQ sauce I'm stuck on bull's-eye. To anyone who wants to spice up BBQ sauce or teriyaki sauce I've found Tapatio hot sauce is best. It doesn't alter the flavor of what you're adding it to.

      That's what I've always used for baked beans. I use pintos in chili

    With all of the other added broth and sauces, that is hardly reminiscent of Jack Daniels but I guess Ketchup, beef broth, molasses beans doesn’t sound as good.

    I made this recipe this weekend and it was fabulous !! I used Kentucky bourbon instead of Jack Daniels, and used some barrel char from the Buffalo Trace distillery for smoke since I was out of bourbon barrel staves ( I just sent the last of my barrel wood to Troy, T-Roy Cooks, and James over at Aim em' and Claim 'em Smokers.). Also, instead of bacon I seasoned them with some pulled pork from a cook I did last week. This recipe is fabulous , thanks for sharing Rus !

    nope I live in Maine and we have a single old guy on the side of the road with the best barbecue I've ever had and I have traveled the world. he has no permits no Peddler's permit and they just leave him alone I think it's because the police like to eat there too!! :-) good man dried beans I can't stand people who dump them out of cans and then doctor them up.

      Wish we could do it that easily around here, but the people that do pay for license, insurance, etc. would make sure to shut a road side vender down. Good old days are gone down here for that sort of thing. Yeah, dry beans is the only way to go. So much better! Thanks for watching!

    Hey Rus, I hope you are doing well. This was a great looking meal that you made. I'm really looking forward to more of your BBQ sides. Being from NC I have been to a lot of great BBQ places and I recently was in a new place that had a interesting/great side that was unique to me. Pimento cheese macaroni and cheese with some pulled pork mixed in and topped with crumbled salt and vinegar chips. It was tasty! Take care brother and looking forward to more from you soon!

    Hi Russ. I just want to say thank you for this video. I thought it was impossible to find a smoker baked bean recipe that didn't use canned beans, until I found your video!!!! I just got this made up, and will be putting them in the smoker in a little while. I did a mix of pinto/great northern, I also didn't have any molasses, so I opted for maple syrup. I also didn't realize I was just about out of beef broth, I had enough for the first initial 1 1/2 cups, but may have to use chicken broth later... Have you even tried these with chicken broth? Anyways... This is my first time smoking baked beans, and your recipe looks delicious so I'm sure they'll turn out amazing. Thanks again!!!

      Hope it worked out well for you. We love this recipe, but if you ever are in a hurry, you can easily use this exact same recipe, but use the canned beans instead. I may have to actually do that on video soon for a easier method, since the world has lost it's patience and want it now attitude. Thanks for watching!

    I have searching for smoked beans recipes for a while now and as an european I'm shocked how much sugar all of these recipes got. Sugar, melassis, syrup, ketchup, bbq sauce... Everything is Sugar, sugar and sugar. Is this really how this is always done?

      Typically only in "BBQ beans" will you find all the sugars, similar to the BBQ sauces. There are plenty of bean recipes that have no sugars at all such as red beans and rice as an example, green bean casserole, lima beans, etc.

    Have a few questions: It's clear you cooked the beans 1 hour (I assume, uncovered? I did not see that you covered them the first hour - or did you?). Then you mention that "I let these go for about 1 hour, I checked them, added about 3/4 Cup of broth... I'm going to do the same thing again...". So, did you cook the beans, uncovered an hour, add 3/4 Cup beef broth, cook another hour, and the add another 3/4 Cup beef broth and cook another hour? About 3 hours cooking time total? Also, I saw you took foil off at the end, but never during the video did I see where you foiled the beans. Did you just foil them the last hour? Sorry, but I didn't see the entire written recipe anywhere on your site (maybe I missed it), and had to watch the video a few times to get most of it. However, the total cooking time and covering of the beans was not specifically discussed! Thank you!

    I some how feel that whatever was leftover in that lil' ol' JD bottle didn't go to waste ;)
    ...except when you "accidentally" spilled your drink in the bean water early on...

    My baked beans start with a can of van camp's, with addition of sauteed onions, black pepper, conecuh sausage, mustard, baby Ray's sweet & spicy bbq sauce, and a little A1 spicy steak sauce.

    Hey Rus, what coal did you use, in the Webber to get it around 300 F° you mention you close the dampers and after 3hrs the temperatur come down. Not sure if I need more coal, I'm using Kingsford original also have a PBC love all your recipes.👍

      I always use Kingsford original. If I remember right, the temperature was slowly getting lower after 3 hours because the charcoal had diminished quite a bit from when I started so that worked out good just keeping the beans hot as the meat finished cooking
