I have not tried the whole / sliced fruits particularly with Whey (yogurt) Soda, but have tried plenty of time with other natural Soda drink like Ginger Soda, Kvass , Cider , Kombucha . It will be perfectly fine .
There could be very minimal lactose but main thing this the good bacteria will help you to digest lactose . You can try consuming little amount first and then monitor how you feeling . Best wishes !

It does not take only 3 days, had mine going now for 6 days and hardly no carbonisation at all. Burped on day 3. But still, everything always takes much longer than what youtube people say.
How fast the carbonation will develop depends on few factors . Is your whey have active yeast and bacteria as mine ? The difference arises based on yogurt to yogurt . Even different batch of yogurt can have different type and number of yeast and bacteria even if made in same home . Another important factor is which weather you are living in . What’s the temperature in your place ? Hotter the place faster the fermentation. In my place if I keep 6 days the bottle will burst . You need to understand the fermentation process before concluding anything . We are leaving in different place and tapping on wild fermentation which is not under our control hence we can’t expect same outcome .
I noticed this too. My parents live in a place with a warmer climate. Only about 10 degrees C on average but I have to make Maas (fermented milk drink) in my instant pot, set to 28deg sous vide otherwise it takes 5 days instead of the 2 days at their home. Thank you for a great idea for my left over whey. I get it from draining the maas to make a spreadable type acid cottage cheese. Perhaps similar to Dahi but I don't add a youghurt culture. It just turns on it's own.
Yes have to add sugar, without sugar there will be no soda effect. Sugar won't makes this drink terrible drinking coke is terrible :). The sugar you add will be fermented and consumed by yeast. If you don't believe taste the drink when adding sugar then taste again after 7 days you will see the drink is no more that sweet. The more you ferment more soda effect less sugar.

The first time takes a while. Save a 1/2 C. to use for the next batch, which will ferment much quicker.
