Sylvain was incredible jealous of the fact that male Byleth never had people going after him for his Crest and only caering about him because of it.
This is more then likely why he wouldn't be able to date Byleth his negative feelings would just get in the way
He already was in Three Houses, so it's nice to see him be consistent.
I mean... Flayn hinted at it in their supports together, and then his relationship with Felix can be interpreted as having romantic undertones too (I mean, they made a vow to die the same day... Not to mention their paired ending feeling quite romantic...)
Edit : He's not the only character in Three Houses who couldn't marry a Byleth of the same sex but still have romantic relationships with others. Petra's and Manuela's endings with Dorothea clearly hint towards love for example, and some other pairs can be interpreted as so as well, like for example Caspar/Linhardt, Caspar/Ashe, Mercedes/Annette, Hilda/Marianne, Catherine/Shamir... But I guess we all know why everyone can have a straight relationship with Byleth but there are lots of restrictions when it comes to gay relationships :/
