there are limitations to file recovery especially the filename length at either end off the data paths. Try recovering to a folder in the root of a drive like c:\backup or similar
Mine says it didn't recover anything, but I know for a fact that there are files on there. Any ideas? I even did a deep scan and it only took one second to tell me there isn't anything on my USB drive, but I know there is, so I'm really confused.

Yes you might need to turn off bitlocker or encryption on drives. It is there for a reason

the more you access the drive the harder it will be to recover any data, every data pass pushes the info further away

Two seconds deep scan files recovered zero. It will scan the C drive ok but when I try the empty reformatted USB stick there's nothing.

was the drive originally encrypted? if so you will need to decrypt the volume before any files can be restored. Yuo will also need the decryption key

if someone gets physical disks from you, it could be possible for them to recover the files. Disk encryption might be an idea if you are concerned
