  • Bún thịt nướng is my favourite Vietnamese dish. FAVOURITE!!! It's essentially rice noodles with grilled meat (any types of meat but always marinated with lemongrass) This noodle salad dish is eaten cold as with any salad.

    Ingredients:
    Serves 4- pax
    Ingredients for pork
    =====
    Marinate pork for at least 1.5 hours. Then bake/air fry at 150C for 10 mins followed by 180C for 5 mins on the other side.
    250g of pork shoulder butt
    1/2 thumb size of ginger
    2 shallots
    1 clove of garlic
    2 stalks of lemongrass (use only the white part)
    1 tablespoon of oyster sauce
    1.5 tablespoons of honey
    1.5 tablespoons of fish sauce
    3 tablespoons of water
    1 tablespoon of cooking oil
    A few dashes of white pepper
    Ingredients for pickled vegetables
    ======
    Marinate vegetables for at least 2 hours
    130g of daikon
    130g of carrots
    2 tablespoons of white vinegar
    1 tablespoon of sugar
    Ingredients for salad dressing
    ====
    3/4 cup of water
    1.5 tablespoons of sugar
    2 tablespoons of fish sauce
    Juice from 4 pieces of calamansi
    2 pieces of chopped bird's eye chilli
    1 clove of chopped garlic
    Other ingredients
    ====
    500g of rice vermicelli (noodles)
    Some Chinese parsley
    Some mint leaves

    A secret I learned from a friend who owns a Vietnamese restaurant is they make oiled scallions (just like ginger scallion sauce, but just scallions). They drain the oil from the scallions, and use a little bit of that reserved oil to toss the rice noodles in and they use the scallions as a topping along w the other items.

    So beautiful and fresh, Bun is one of my favorite Vietnamese dishes♥ Which would be a better substitute for the calamansi- tangerine, lemon or lime juice? (I'll be making both this recipe & Bahn Mi later this week, yum!)

    Going to make this! I do not own an air fryer. Before pan frying, do i dredge the pork with flour? Noodles- is it chor bee hoon? Thanks!!!

      You can cook the pork in a regular oven or over charcoal,you can coat the pork in corn flour if you wish to pan fry and make it crispy , also the typical noodles used is rice vermicelli

      Hihi Soh Hui. You can also pan fry as it is - use medium heat so that the meat will be cooked before it gets too charred. Then towards the end, you can turn up the heat to give the meat a nice char on the outside. Yes we used chor bee hoon - the ones that’s normally used for laksa.

    Hello, I love the color and texture of the meat. But I do not have an air fryer. Can I use the same temperature and cooking time for oven bake instead of air fry?

      Hi K H. So sorry for our late reply. You can use the same temperature or slightly higher (+10C) to cook in the oven because oven is much bigger. Hope this helps. Happy cooking!

      @@spicenpans Thank you for the reply. I ended up baking 1.5kg worth of pork for 40 min. It turned out perfect. Brown and crispy on the outside, soft and juicy on the inside.
