Hello, If you want lettuce to produce seeds you have to let the plant go to flower. When they reach maturity and you won’t harvest them, eventually they will go to flower and produce seeds. How long it takes depends on the variety and also whether you grow the plants when days are short or long. Plants grown on short days will take longer.
You don't ever see the flower or seeds on them in the store because it makes the leaves super bitter and overall not good. All energy goes into flowering or bolting some call it. Most plants of this type will go to flower really quickly in warmer weather so it's usually planted in cooler times. Some varieties are very hearty and if you let them drop seeds they will start popping up growing on their own! Depending on your climate. Also... There's varieties of wild lettuce that most people think is just a lawn weed!

I’m trying desperately to grow leaf lettuce indoors. It sprouted, and started to grow some true leaves, but it’s growing so slow and leggy. Any suggestions?
Hello, first of all by "indoors" you mean on windowsill or under growlight? Leggy seedlings means they don't have enough light, but they are warm enough to grow.

Hello, you can harvest each plant 3-4 times for solid yield and then it's better to start new plants from seed. It also depends on weather conditions, I grew these in the spring until hot summer weather arrived and started new plants from seed in late summer for autumn harvesting.
To see how many seeds are going to sprout, and therefore how many plants I will grow 🙂 basically everything that sprouts and is not on videos (in containers), is in open garden or greenhouse.

That very much depends on Your personal preference. For me best tasting are iceberg and romaine lettuce varieties 🙂
