Thanks for the tips! I had a problem with my charcoal temperature in grilling. I used to fill the chimney till the top end but I spread them to one layer in a big surface . The result was the one you mention. I lost temperature very quickly. Now I know why. (Ps. I m new in grilling)
Using chunks for smoke if is easy . They can be placed right on top of the coals especially in offset cooking. Usually they can be placed right next to the coals at first to warm up the wood so it burns easily. Then place them on the coals directly to start the smoking process.
