3 large russet potatoes,
1/2 red onion, diced,
1 medium carrot, sliced,
1 Persian cucumber, sliced
2 hard-boiled eggs, diced
Seasoning:
1 tsp salt,
1 tsp black pepper,
1 tsp sugar,
1 tbsp white vinegar,
5-6 tbsp mayonnaise

diced ham,
diced apple

The usage of sugar and rice vinegar. For this particular recipe I used what I had in the pantry and white vinegar was the winner. Historically, this is an American inspired side dish.
