The meat doesn't look too cook. I would probably cook it a little before putting it on the tortilla or substituting it with chicken. Cook it a little bit first though. I will definitely try it.
My mom used to make enchiladas like this! The only difference is she used shredded chicken and baked it with lots of cheese on top. Very delicious and filling!
The meat doesn't look cooked all the way through. It still looks pink. I would make a vegetarian version with zucchini and onions instead. Then you don't have to worry about how well cooked anything is.

The meat needs to be cooked before it's put in the oven. Just look at all of the watery meat juice under the tortillas? The tortillas are probably soggy under. Other than that I like the recipe & I'm looking forward to making this recipe for my family. 😋
Ingredients that need different temperatures! The meat is not done while the eggs wraps arr burned ! That why a hamburger is made with all the ingredients separate! 😢
