Try using some mutton fat as well instead of so much oil... No tomatoe, No ginger and garlic would be based on preference. I assume tomatoe is a No No in this recipe.. Also. 90 minutes main in our hills mutton does not cook in karai. Specially 4kg. Here in rural mounatins it takes us 50 minutes to cook 1 kg of mutton in cooker. Karai mein to half a day is needed... My advice to cook 4 kg would to give 1 hour of whistles on 10 ltr. Cooker and then slow boil in gravy for another 1 hour... Cheers...
Hello Chef, i was under the impression that after adding curd, flame should be kept low to avoid curd splitting. But you suggest to keep flame high. Curd won't split?
Flame low if curd is added at the early stage when dishes like curd marinated meats are added to be braised or stir fry or if curd is the gravy base eg kadhi pakoda. When curd comes in direct contact with the hot vessel then it splits. But if the the pan is already full u can add curd on top of the ingredients and mix gradually on any flame
