  • Vegetables are the very first foods fermented by humans. People around the world have found ways to create exciting flavours with these gifts of nature.
From the vast, fertile lands of Chikusei, Japan, the premium Milky Queen rice bran is the starter to the unique tangy, crunchy nukazuke. On the eastern shores of New Zealand, traditional Maori culinary knowledge has turned the simple corn into food that lasted through the colder months of the year. And in Java, Indonesia where two-thirds of the island is cultivated land, one crop reigns supreme: cassava, the choice ingredient for making ‘tape singkong’.

So fascinating to watch about tape singkong because here in the Philippines, an IP tribe of northern luzon (where I belong) also uses the rice-based yeast to ferment rice for wine, which we call 'tapey or tapuy'. We also use it to ferment fruits and other produce.

An hour has passed and only 300-some of us are interested in this fascinating stuff. I feel bad for humanity. We're doomed to be eating nothing but junk food in a few years.

I just knew here that Hudson is now making the cakes! He was a unique singer, half-man half-woman in the 2010s

As an Indonesian, I clicked when I see tape singkong on the thumbnail.
But seeing Hudson featured at the end of the video, it really caught me off-guard(he was a big name in early 2010s Indonesian singing) 😲
