Southeast Asia's Flavourful Fermented Meat Dishes: Chicken, Pork, And Buffalo | Sour, Salty & Alive

  • The most highly prized of foods, meat has been preserved for generations by drying, curing and the ancient way of fermentation. Especially in warm and humid tropics, fermentation enables meat to last longer without going bad.
    In north Borneo, indigenous tribes that live off the land use fermentation to stretch their bounty with the traditional technique of ‘pinongian’, together with the potentially poisonous pangi seed. In Thailand, rock salt gathered from mountain ranges is used to create the traditional soured meat ‘nahm’, but this time with a twist using chicken tendons. In the Visayas region of the Philippines, the country’s Spanish culinary heritage influences the popular sweet and spicy sausage balls known as Chorizo de Cebu.

    As a Cebuano, when my friends from Manila would visit Cebu, the first thing they want to try is Chorizo!!! So i usually take them to Matias in Mandaue City because they have one of the best Chorizo. So glad to see chorizo de cebu is being featured here. 🥰🥰🥰🥰

    Pangi is pangium edulis. Here in sabah it is smoked till dry. Grow in jungle and not in mangrove

    i would not classify chorizo de cebu as a fermented food item, humba of pampanga is, it is stored underground for days before consumption.

      @@markv1974 not sure what you meant. She clearly stated halal pork longganisa. Yes there are chicken, beef, fish longganisa. But there is no such thing as hala pork as itvis haram to both two faiths which is the Muslim and Jewish faith. There might be some more faiths that do not eat pork that i might not be aware.       "Fresh" meat is an illusion anyway, you can't just consume meat as freshly slaughtered as the muscles are too tough. The carcass first need to be "aged" a bit in a walkin freezer type meat room to let the meat naturally tenderize. Then the "fresh meat" you get is just freshly chopped or sliced, not freshly slaughtered.

    Due to Spanish influence, Filipino dishes have a signature salty, sweet, sour taste...this sets apart from most Asian dishes which are spicy in taste!

      The sour taste is pre-colonial and very distinctly Filipino. It’s unfair to say it’s due to Spanish influence.

      No. We like sweet, sour, and salty. Sweet is mostly due to our heritage as an old sugar producing colony. Sour, and Salty is something we already have, like we've been producing coconut wine for centuries already.
      Then you have to remember, Chilies were brought over from Mexico, so Chilies aren't exactly native in Asia.

      It wasn't, and you were not paying attention to what was said in the video. The guy making the pizza was a handyman in New York, presumably where he acquired a liking for pizza. When he returned to the Philippines, he just took what he loved eating and incorporated an available ingredient.

    Those are not good chorizos. They are almost all fat. Real Spanish chorizos are mostly meat with some fat.

      Yes, wagyu beef is not good right? Also as you heard those are not Spanish chorizo. Those are Cebu chorizo. There must be a reason why it's mostly fat which was not discussed in the video.
