Ghee is actually pure fat, just fyi. The way that ghee is made is to boil/cook butter until the milk proteins are solid enough to strain out, then once the protein is strained out what remains is the concentrated fat which is ghee. The benefit of ghee is that it has a much higher cooking temperature than butter because it doesn't have any protein in it that can causes it to burn like butter does. So it tastes like butter but it performs more like vegetable oil when cooking. In ayurveda it's said to be very healthy, but there is really no evidence of that. So take this information however you'd like.

Yea if you take out protein from something that is just protein and fat then it becomes all fat. So now it would be 100% calories from fat instead of ~ 85% fat
