- In this video I show you how to "clean" a tricky, yet delicious piece of meat:
The entrecôte or ribeye. Its actually very easy and a little counter-intuitive. You need to do your best to resist taking off too mich of that fat and marbling, so you don't end up with a dry, gray piece of meat.
Keeping the fat marbling is especially good if you plan on grillsmoking the meat on the "low and slow".
This recipe is part of a series where you'll learn essential skills which can be applied to other cuts of meat.
